Nothing is easier than homemade cookies made from a cake mix for a festive cookie for Valentine's Day. These vanilla cookies are decorated with fun sprinkles to celebrate your special loved ones on Cupid's Day.

Preheat oven to 350°F. Line cookie sheets with parchment paper.
In a large mixing bowl, whisk together 1(16.50) ounce box, white cake mix and 1 teaspoon baking soda.
In another medium-size bowl, whisk 2 large eggs, ⅓ cup vegetable oil, and ½ teaspoon pure vanilla extracttill combined.
On low speed, using a hand mixer with beaters attached, add the egg mixture to the dry cake ingredients, beat for 1 to 2 minutes to blend ingredients.
To the batter, add 1 ½ cups sprinkles and stir to mix them throughout the cookie batter.
Use a small cookie scoop to measure out the cookie balls and place each ball on the prepared cookie sheet. Leave about 2 inches between each dough ball.
Sprinkle remaining sprinkles on top of the cookies
Bake in the preheated oven until cookies begin to turn brown, about 9 minutes.
Remove the baking sheet from the oven and allow the cookies to cool on the baking sheet for 3 minutes.
Transfer the cookies to a cooling rack to cool completely.
Serve and enjoy.
