Cajun Shrimp and Sausage Recipe

Enjoy a one pan Shrimp and Sausage dinner with veggies that is loaded with Cajun flavors. This meal is keto friendly and ready in 30 minutes. A delicious quick, easy dinner.

Equipment

Ingredients

  • 1 pound jumbo shrimp, peeled and deveined
  • 3 Tablespoons extra virgin olive oil, divided
  • 3 (3) ounce andouille sausage links, sliced ½ inch thick Note 1
  • ½ medium white onion, peeled and finely diced
  • 2-3 cloves garlic, peeled and minced
  • 1 medium orange or bell pepper, seeded and finely diced
  • 1 medium green bell pepper, seeded and finely diced
  • 1-2 Tablespoons homemade Cajun seasoning divided, can use store-bought Note 2
  • salt and black pepper, to taste
  • 1 small yellow squash, sliced and cut into half rounds
  • 1 small zucchini, sliced and cut into half rounds
  • 2 teaspoons fresh parsley, chopped

Instructions

  • Toss the shrimp with 1 Tablespoon olive oil and ½ Tablespoon Cajun seasoning. Set aside.
  • Set a large skillet over medium heat and add the Andouille sausage. Saute, stirring occasionally, until the sausage is browned, approximately 4-5 minutes. Transfer sausage to a plate and set aside.
  • Add 1 Tablespoon olive oil to the skillet, along with the seasoned shrimp. Spread the shrimp into a single layer without overcrowding. Cook, stirring once, just until the shrimp is opaque and starts to curl, approximately 2 minutes. Do not overcook. Transfer shrimp to the plate with the sausage.
  • Mix in remaining olive oil to the skillet, along with the onion, garlic, and diced bell pepper. Sprinkle with ½ Tablespoon Cajun seasoning, stir to combine. Cook, stirring frequently until the vegetables soften and develop color, approximately 4-5 minutes.
  • To the skillet, add the yellow squash and zucchini, saute, stirring frequently, just until browned, crisp, and tender, approximately 2-3 minutes. Remove from heat and stir in the Andouille sausage, shrimp, and fresh parsley. Stir to combine and serve immediately. Enjoy!
  • Stir to combine. Taste for seasoning. If needed, add a bit more Cajun seasoning, salt, and pepper. serve immediately. Enjoy!
  • Optional, garnish with chopped parsley. Serve and enjoy.

Note 1: While this is a low-carb recipe, if you follow a Keto-diet, be sure to use sugar-free andouille sausage. Some sausages have the addition of sugar in them.
Note 2: Start with 1 Tablespoon Cajun seasoning. Taste and adjust seasonings, as needed. While I make homemade seasonings often, I always have Slap Ya Mama Cajun seasoning in our spice rack. Highly recommend this spice if you don't want to make your own.
