    Cajun Shrimp and Sausage with Vegetables is a one-pan healthy meal option for any night of the week. This simple dish comes together quickly and is packed with flavor. Vary the veggies with what you have on hand, making it perfect for using up leftovers.

    • jumbo shrimp, peeled and deveined
    • extra virgin olive oil, divided
    • andouille sausage links
    • white onion, peeled and finely diced
    • garlic, peeled and minced
    • orange or bell pepper, seeded and finely diced
    • green bell pepper, seeded and finely diced
    • homemade Cajun seasoning
    • salt and black pepper, to taste
    • yellow squash, sliced and cut into half rounds
    • zucchini, sliced and cut into half rounds
    • fresh parsley

    Instructions

    1. Toss the shrimp with 1 Tablespoon olive oil and ½ Tablespoon Cajun seasoning. Set aside.
    2. Set a large skillet over medium heat and add the Andouille sausage. Saute, stirring occasionally, until the sausage is browned, approximately 4-5 minutes. Transfer sausage to a plate and set aside.
    3. Add 1 Tablespoon olive oil to the skillet, along with the seasoned shrimp. Spread the shrimp into a single layer without overcrowding. Cook, stirring once until the shrimp is opaque and starts to curl approximately 2 minutes. Do not overcook. Transfer shrimp to the plate with the sausage.
    4. Mix the remaining olive oil in the skillet and add the onion, garlic, and diced bell pepper. Sprinkle with ½ Tablespoon Cajun seasoning, stir to combine. Cook, stirring frequently until the vegetables soften and develop color, approximately 4-5 minutes.
    5. Add yellow squash and zucchini to the skillet. Saute stirring frequently, until browned, crisp, and tender, approximately 2-3 minutes. Remove from heat and stir in the Andouille sausage, shrimp, and fresh parsley. Stir to combine and serve immediately. Enjoy!
    6. Stir to combine. Taste for seasoning, if needed, add a bit more Cajun seasoning, salt, and pepper. serve immediately.
    7. Optional, garnish with chopped parsley. Serve and enjoy.

    Storage

    Leftovers can be stored in the refrigerator in a covered airtight container for up to 3 days. reheat in the microwave or stovetop. I prefer to reheat on the stovetop.

    • Frozen shrimp can be used in this recipe. Just make sure they are thawed before using.

    Yes! You can use any variety of smoked sausage in this recipe.

    Yes, you can add any variety of your favorite sauteed vegetables. Mushrooms would be delicious in this recipe.

    What is the best way to reheat shrimp and vegetable dishes?

    I prefer to heat on the stovetop in a skillet with a small amount of oil for a fresh-made taste.

    Is it safe to cook raw shrimp with vegetables?

    I like to cook my shrimp separately from the vegetables because they cook faster than veggies, and you don't want to overcook them.

    Do you have to boil shrimp before sauteing?

    No,  you do not have to boil shrimp before sauteing.

    Is Cajun Shrimp spicy?

    This recipe does have some heat to it.  You can adjust the amount of Cajun seasoning to your preference.

    Note 1: While this is a low-carb recipe, if you follow a Keto-diet, be sure to use sugar-free andouille sausage. Some sausages have the addition of sugar in them.
