Preheat the oven 350°F. Line a large baking sheet with aluminum foil. Set aside.
In a large mixing bowl, combine the ground beef, onion, pickles, crushed Ritz crackers, Worcestershire sauce, Thousand Island dressing, salt, and black pepper. Mix well until everything is combined.
On the prepared baking sheet, form the meat mixture into 6 equal mini loaf shapes.
Bake in the preheated oven for 40-45 minutes. The beef should reach an internal temperature of 165°F when fully cooked.
When the meatloaves are done remove them from the oven and immediately top each one with a slice of American cheese. It will melt into the mini meatloaf.
When serving, drizzle each meatloaf with Thousand Island dressing. Top with diced pickles, onions, and shredded lettuce.
