    1. Preheat the oven to 400°F/220°C.

    • Refrigerator: Store any leftovers in an airtight container in the fridge for up to 4 days.

    Ingredients

    • 2 cups long grain white rice
    • 2 ¾ cups low sodium chicken broth Note 1
    • 3 Tablespoon soy sauce
    • 1 Tablespoon rice vinegar
    • 1 Tablespoon sesame oil
    • 1 Tablespoon minced garlic
    • 2 cups frozen vegetables (corn, carrots, peas, green beans)
    • ½ teaspoon salt
    • ½ teaspoon pepper
    • green onions, chopped optional garnish

    Instructions

    • Preheat the oven to 400°F.
    • To a 9x13 inch baking dish, add all ingredients 2 cups long grain white rice, 2 ¾ cups low sodium chicken broth, 3 Tablespoon soy sauce, 1 Tablespoon rice vinegar, 1 Tablespoon sesame oil, 1 Tablespoon minced garlic, 2 cups frozen vegetables, ½ teaspoon salt, and ½ teaspoon pepperMix to combine.
    • Tightly cover the baking dish with aluminum foil and place it in the preheated oven for 40 minutes.
    • Remove the pan from the oven and carefully take off the aluminum foil. Place the pan back in the oven for 5 minutes or until the rice is slightly browned on top.
    • Remove from the oven and loosely cover the pan with foil. Let it sit for 10 minutes.
    • Remove the foil and fluff the rice with a fork.
    • Garnish with green onions, chopped and serve with your favorite protein, if desired.
