- 2 cups long grain white rice
- 2 ¾ cups low sodium chicken broth Note 1
- 3 Tablespoon soy sauce
- 1 Tablespoon rice vinegar
- 1 Tablespoon sesame oil
- 1 Tablespoon minced garlic
- 2 cups frozen vegetables (corn, carrots, peas, green beans)
- ½ teaspoon salt
- ½ teaspoon pepper

Instructions
- Preheat the oven to 400°F.
- Add all of the ingredients to a 9x13 inch baking dish. Mix to combine all of the ingredients.
- Cover the dish tightly with foil and place it in the oven for 40 minutes.
- Remove the pan from the oven and carefully take off the foil. Place the pan back in the oven for 5 minutes or until the rice is slightly browned on top.
- Remove from the oven and loosely cover the pan with foil. Let it sit for 10 minutes.
- Remove the foil and fluff the rice with a fork.
