    I'm always on the lookout for easy, healthy weeknight dinners and this Crockpot Sweet and Sour Chicken is a winner! The chicken cooks up so tender in the crockpot and the sweet and sour sauce is perfect. Serve it over rice or quinoa for a complete meal. This dish is sure to become a family favorite!

    • green bell pepper
    • red bell pepper
    • chopped onion
    • boneless skinless chicken breast
    • granulated white sugar
    • orange juice
    • cornstarch
    • apple cider vinegar
    • soy sauce (I used low sodium)
    • ginger paste
    • pineapple tidbits in juice, drained

    Instructions

    1. Place all ingredients into your slow cooker.
    2. Stir well to mix.
    3. Cook on high for 4 hours, or low for 6 to 8 hours.

    • 1 large green bell pepper, seeded and chopped
    • 1 large red pepper, seeded and chopped
    • ⅓ cup yellow onion, peeled and chopped
    • 1 pound skinless boneless chicken breast, chopped into 1-inch pieces
    • ¼ cup granulated sugar
    • ⅛ cup orange juice
    • 3 Tablespoons cornstarch
