    Brownies

    • creamy peanut butter
    • unsalted butter, room temperature
    • light brown sugar
    • white granulated sugar
    • large eggs
    • pure vanilla extract
    • all-purpose flour
    • baking soda
    • Kosher salt

    Vanilla Frosting

    • unsalted butter, room temperature
    • confectioners sugar
    • pure vanilla extract
    • heavy whipping cream

    Instructions

    1. Preheat oven to 350°F/177°C. Spray a 9" X 13" baking pan with nonstick baking spray. Line the baking pan with parchment paper with extra on the four sides.

    Brownies

    1. Follow the ingredient list and baking directions listed on the back of the boxes. Put the batter in the prepared baking pan. Set aside. ( Both boxes will go into the one pan)

    Cookie Dough

    1. In the bowl of a stand mixer, using the paddle attachment, cream together the peanut butter and soft butter, until well combined, about 4 to 5 minutes. The mixture will be smooth and fluffy.
    2. To the peanut butter mixture, add the brown sugar, white sugar, eggs, and vanilla. Beat until completely mixed, about 4 minutes.
    3. In a separate medium-sized mixing bowl, whisk dry ingredients flour, baking soda, and salt. Stir in the oats and chocolate chips.
    4. Slowly add and mix the dry ingredients into the peanut butter mixture until combined.

    Assemble the brownies

    1. Use a serving spoon to drop the oatmeal mixture over the brownie batter.
    2. Sprinkle the Halloween sprinkles and the large candy eyes over the top.
    3. Bake in the preheated oven for 25-25 minutes. Insert a toothpick in the center, brownies are cooked through when the toothpick comes out clean.
    4. When done, set on a counter for at least 30 minutes to cool. Remove from the baking pan.

    Frosting

    1. In the bowl of a stand mixer, using the beater attachment, beat the butter, powdered sugar, vanilla, and heavy whipping cream until combined, creamy, and stiff.
    2. Beat in a few drops of neon green food coloring and mix until blended
    3. Allow frosting to firm up before enjoying!
    4. Beat in a few drops of neon green food coloring and mix until blended.
    5. Scoop the frosting into the piping bag. Pipe big and small dollops on the brownies. Place two mini candy eyes in each dollop of frosting.
    6. Let the frosting harden before slicing and serving.

    Storing - Store these Halloween Monster Cookie Brownies in an airtight container at room temperature for up to five days.

    Freezing - You can freeze these Halloween brownies in a freezer-safe container for up to two months. I recommend that you freeze them unfrosted and then frost them after they are thawed.

    Thawing - Thaw frozen brownies at room temperature for two to three hours.
