- water
- uncooked spaghetti, broken in half
- diced tomatoes with green chiles
- salsa
- tomato paste
- Mexican blend shredded cheese, divided

- sour cream, optional topping

- Press the saute button on the pressure cooker. When the display reads hot, add ground beef and onions. Cook the ground beef until browned, crumbling as it cooks. Drain well and return the beef to the pressure cooker.
- Stir in the taco seasoning and water. Top the beef mixture with the broken spaghetti, laying the pasta in a random pattern to avoid clumping
- Pour the tomatoes, salsa, and tomato paste on top of the spaghetti. Do not stir.
- Put the lid on the electric pressure cooker and seal the valve. Press the manual button and put the time to 7 minutes. Once time is complete, perform a quick release of the pressure.
- Remove lid, and stir in one cup of Mexican cheese. Top the spaghetti with the remaining 1 cup of cheese. Replace the lid to allow the cheese to melt for 5 minutes prior to serving.
- Serve topped with chopped cilantro if desired.
Storage
This dish is best enjoyed fresh.
However, any leftovers can be stored in a covered airtight container in the fridge for up to 4 days.
Reheat individual portions in the microwave until heated through.
I do not recommend freezing this dish as the pasta can become mushy.
