Easy Turkey Pot Pie Recipe

Enjoy this easy turkey pot pie recipe. We speed things up using a ready-made pie crust but you can use a homemade flaky pie crust. The filling is a perfectly seasoned creamy sauce and filling that uses leftover turkey to maximum deliciousness!

Step 1: Warm the large skillet over medium-high. Once it is warm, reduce heat to medium and add and melt the butter.

Step 2: Stir in onions and cook for about five minutes to soften the onions. Once they become translucent, stir in flour.

Step 3: Mix in poultry seasoning, thyme, salt, and pepper. Continue to stir until everything is incorporated with the flour. The mixture will thicken slightly.

Step 4: Alternate pouring in small amounts of half-and-half and chicken broth into the onion mixture. Continue to do this until all the broth and half-and-half have been added.

Step 5: Mix in the shredded turkey to combine ingredients.

Build the Pot Pie

Step 1: Place one pie crust on the bottom of your pie plate. Pour in your turkey pot pie mixture. With the back of a spoon smooth out the pot pie mixture so that it is even in the pie dish.

Step 2: Place the other pie crust on top and pinch together the sides of your pot pie.

Step 3: Using a sharp knife cut lines in the top of your pie crust to vent.

Step 4: In a small bowl, beat the egg with a whisk to make an egg wash. Brush the egg mixture over the top and sides of the crust to create a seal.

Step 5: Place your pie in the oven for 30 to 35 minutes, or until the crust is lightly brown. The filling will begin to bubble. Cool the pie for 15 minutes before serving.

Storage

Be sure to cover your pot pie with plastic wrap or foil and store it in the fridge for up to three days.

Freezer Instructions:

This pot pie can be stored in the freezer baked or unbaked. To freeze wrap your pot pie in plastic wrap and then in foil. It can be frozen for up to three months.

To bake a frozen pot pie you will need to adjust your cooking time by adding 10 to 15 additional minutes when you bake the pot pie per the directions below.

Expert Tip: If your crust starts to brown too much loosely cover the crust with aluminum foil.

You can use any type of vegetable but I like carrots, potatoes, peas, corn, and green beans.

How long is turkey pot pie good for?

Turkey pot pie will last in the fridge for up to three days. Or in the freezer for three months.

Variations

  • Cooked chicken is another great protein to use in this pot pie recipe.
  • Rotisserie chicken can also be used to make this a chicken pot pie.
  • Fresh vegetables can be used instead of frozen, but you will need to cook them until they are tender-crisp first.
  • Also, Thanksgiving leftover vegetables can be added to the turkey mixture.
  • Leftover Thanksgiving turkey makes a great option for the cooked turkey in this pot pie.
  • Store-made pie crusts work well. If you have extra homemade pie crust available, feel free to use them.
  • Heavy cream can be used in lieu of half and half.
