Is there anything better than a soft, chewy sugar cookie? I don't think so! This cross sugar cookie recipe is the perfect way to celebrate Easter. They're easy to make and absolutely delicious! Plus, they're decorated with cute little edible flowers on top. Perfect for any Easter gathering!

Ingredients

  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated white sugar
  • 1 large egg
  • ½ teaspoon almond extract
  • 1 teaspoon vanilla extract
  • powdered sugar or all-purpose flour, for rolling

Easy Royal Icing

  • 1 (16) ounce can, vanilla frosting

Decorating the cookies

  • edible flowers

Instructions

  1. Preheat the oven to 350°F. Prepare a baking sheet with parchment paper.
  2. Whisk together dry ingredients: flour, baking powder, and salt. Set aside.
  3. In a mixing bowl, blend the butter and sugar until creamy and light.
  4. Add egg, almond extract, and vanilla extract.
  5. Mix well.
  6. Slowly add dry ingredients and mix until combined. The dough will be a little crumbly.
  7. Turn out the dough onto a surface sprinkled with powdered sugar or flour.
  8. Press into a ball and then roll out to ¼ inch thickness.
  9. Use a cross-shaped cookie cutter to cut each cookie. Carefully lift shaped cookies to the baking sheet.
  10. Using a flat spatula is recommended to help the cookies maintain their shape.
  11. Bake cookies for 7 to 9 minutes. Do not brown the cookies.
  12. Allow cookies to cool for at least 20 minutes on the baking sheet before carefully removing them to a cooling rack.
  13. After cooling, decorate with royal icing, (quick recipe below). While the icing is still wet, press the decorations into the cookies.

Easy Royal Icing

  1. Remove the lid and foil from the frosting can.
  2. Place the frosting can in the microwave for 30 seconds ( for a thicker royal icing) to 1 minute (thinner royal icing for flooding.) Stir well.
  3. Transfer to a piping bag and decorate the cookies. Add the flowers to the cross before the icing dries.

Storage

Store the cookies in an airtight container, or sealed bag at room temperature for up to 1 week.
