    Zucchini Keto Sliders Recipe

    A keto-friendly alternative to regular sliders, these zucchini keto sliders will provide you with the satisfying experience of eating your favorite food while still staying on track with your low-carb lifestyle!

    Zucchini Keto Sliders are mini hamburgers that are perfect for a nice summertime barbecue. The recipe is very easy to make and requires few ingredients. Making this recipe a staple in my house.

    Zucchini

    • large zucchini
    • salt and black pepper, to taste

    Beef Sliders

    • ground beef
    • salt
    • black pepper
    • garlic powder
    • Italian seasoning
    • American cheese, halved
    • avocado or olive oil 
    • lettuce, tomato, onions, pickles, optional
    • ketchup, optional if using ketchup and following a keto/low-carb diet be sure to use a keto ketchup

    Equipment

    • knife
    • cutting board
    • Paper towel
    • Large skillet with lid
    • Aluminum foil
    • Medium bowl

    Instructions

    Zucchini

    Steps to make zucchini slices as keto buns, 1st photo is sliced zucchini on a cutting board, 2nd photo, sliced zucchini, 3rd photo zucchini slices in a saute pan.
    1. Wash zucchinis and keep the skin on. Slice the zucchinis into ½ - inch rounds.
    2. Sprinkle salt on both sides of the zucchini rounds. Let sit for 15 minutes, this extracts excess water from the zucchini. Once the 15 minutes is up, use a paper towel to blot excess water from the zucchini rounds.
    3. In a large skillet over medium heat, once the pan is warm, drizzle the oil into the pan. Add the zucchini rounds and saute about 2 minutes until golden brown, then flip and saute the other side of zucchini another 1-2 minutes, until golden brown.
    4. Repeat until all the zucchini rounds have been cooked through. Set them aside while making the sliders. Keep covered with aluminum foil to retain heat or keep in the oven at a temperature of 175°F until the sliders are cooked through. ( Use the same skillet to make the sliders)

    Beef Sliders

    1. In a medium bowl, combine the ground beef, salt, black pepper. garlic powder, and Italian seasoning.
    2. Form 8 sliders, 2 ounces each.
    3. In a large skillet, over medium-high heat, ( be sure skillet is hot when adding the sliders). Fry about 2-3 minutes per side depending on your preference of doneness.
    4. Once cooked through, add American cheese to each slider. Let the cheese melt on the slider. Cover the skillet with a lid to assist the cheese to melt.
    5. Once the cheese is melted remove and place each slider on one cooked zucchini round. Repeat until all sliders are cooked through.
    6. Add your favorite toppings such as lettuce, tomato, pickles and enjoy.

    Storage

    Store in an airtight coveered container for up to 3 days in the refrigerator. I recommend storing leftovers separately, and not assembled.

    The zucchini can get soggy when sitting on the burger which is why the they should be stored seperately.

    Expert Tip: For a nice crust on your zucchini be sure to dry them off well before you sear them.

    Frequently Asked Questions

    Can I freeze these?

    No, unfortunately, the zucchini does not hold up well to freezing. You can however freeze the beef patties raw or cooked.

    How to reheat?

    Reheat the burgers and zucchini separately, on a baking sheet in the oven at 350 degrees for 7 to 10 minutes or until warm.

    Can I use different kinds of cheese?

    You can use any cheese you like, but I find American Cheese the best for melting and gooey deliciousness.

    Variations

    • Use ground turkey or ground chicken for a lower fat meat option.
    • If you are like a spicy burger you can add crushed red pepper flakes or sriracha sauce to your ground beef before booking.
    • Top with your favorite keto condiments such as guacamole, mustard, or mayo.
    • Cooked bacon slices would make an excellent addition to these zucchini sliders.

    Serving Suggestions

    These zucchini beef sliders are great on their own, but they also pair well with a Simple Arugula Salad, Roasted Broccoli, or Green Beans with mushrooms and shallots.
