    1. Add the cubed watermelon to a bowl.

    Storage - Watermelon Cucumber Feta Salad is best made fresh and eaten the same day.

    Leftovers: Store any leftovers in an airtight covered container in the refrigerator for up to one day.

    Make Ahead: I have cut up the fruit and feta and stored them separately in air-tight containers in the refrigerator in the morning. Then compiled the salad right before we were ready to enjoy it.

    Eileen's Tips for Success

    • Always best to use a sharp knife to cut the fruit.
    • Keep each fruit cut to the same size. For example, watermelon cut into 1 to 2-inch squares. Cucumber and red onion, thinly sliced.

    • olive oil- Avocado oil or a flavorful Spanish oil can be used.
    • Tajin: Chili powder can be used as a substitute.
    • red onion: any type of onion can be used with this watermelon feta salad.

    Ingredients

    • 3 cups cubed seedles watermelon
    • 1 mediun red onion (peeled and sliced thin)
    • 2 cups mini cucumbers (thinly sliced)
    • 1 cup crumbled feta cheese

    Salad Dressing

    • ½ cup olive oil
    • ¼ cup lime juice
    • ¼ cup honey
    • 1 teaspoon Tajin seasoning
    • ½ teaspoon salt
    • ½ teaspoon ground black pepper
    • chopped mint leaves (optional garnish)

    Instructions

    • In a large mixing bowl, mix together 3 cups cubed seedles watermelon, 1 mediun red onion (peeled and sliced thin), 2 cups mini cucumbers (thinly sliced), 1 cup crumbled feta cheese.

    To make the salad dressing

    • To make the dressing, in a small mixing bowl, add ½ cup olive oil, ¼ cup lime juice, ¼ cup honey, 1 teaspoon Tajin seasoning, ½ teaspoon salt, and ½ teaspoon ground black pepper. Whisk until combined. Taste for seasoning; if needed, adjust seasonings.
    • Pour the dressing over the salad and mix once more until everything is evenly coated.
    • Garnish with chopped mint leaves, optional garnish, and serve!
