- Keep each fruit cut to the same size. For example, watermelon cut into 1 to 2-inch squares. Cucumber and red onion, thinly sliced.

- 3 cups cubed seedles watermelon
- 1 mediun red onion (peeled and sliced thin)
- 2 cups mini cucumbers (thinly sliced)
- 1 cup crumbled feta cheese
Salad Dressing
- ½ cup olive oil
- ¼ cup lime juice
- ¼ cup honey
- 1 teaspoon Tajin seasoning
- ½ teaspoon salt
- ½ teaspoon ground black pepper
- chopped mint leaves (optional garnish)
Instructions
- In a large mixing bowl, mix together 3 cups cubed seedles watermelon, 1 mediun red onion (peeled and sliced thin), 2 cups mini cucumbers (thinly sliced), 1 cup crumbled feta cheese.
To make the salad dressing
- To make the dressing, in a small mixing bowl, add ½ cup olive oil, ¼ cup lime juice, ¼ cup honey, 1 teaspoon Tajin seasoning, ½ teaspoon salt, and ½ teaspoon ground black pepper. Whisk until combined. Taste for seasoning; if needed, adjust seasonings.
- Pour the dressing over the salad and mix once more until everything is evenly coated.
- Garnish with chopped mint leaves, optional garnish, and serve!
