- Always best to use a sharp knife to cut the fruit.
- Keep each fruit cut to the same size. For example, watermelon cut into 1 to 2-inch squares. Cucumber and red onion, thinly sliced.

- In a large mixing bowl, mix together 3 cups cubed seedles watermelon, 1 mediun red onion (peeled and sliced thin), 2 cups mini cucumbers (thinly sliced), 1 cup crumbled feta cheese.
- To make the dressing, in a small mixing bowl, add ½ cup olive oil, ¼ cup lime juice, ¼ cup honey, 1 teaspoon Tajin seasoning, ½ teaspoon kosher salt, and ½ teaspoon ground black pepper. Whisk until combined. Taste for seasoning; if needed, adjust seasonings.
- Pour the dressing over the salad and mix once more until everything is evenly coated.
- Garnish with chopped mint leaves, optional garnish, and serve!
