    No-Bake Cheesecake Sticks

    It's summertime and that means picnics, cookouts, and all sorts of fun outdoor activities. What could be better than enjoying a delicious cheesecake on a stick while basking in the sunshine? With these simple steps, you can easily make your own cheesecake popsicles at home. They're perfect for any occasion!

    • Not to mention, it's super easy to make and requires no baking! This recipe is perfect for a summertime treat or a party snack.
    • The kids can get into the kitchen and have a blast making their own cheesecake sticks.

    Ingredients

    • plain cheesecake defrosted homemade or store-bought
    • white chocolate chips, white candy melts will work
    • mermaid sprinkles

    Equipment

    • Stainless Steel Mixing Bowls
    • popsicle sticks

    Instructions

    This is an overview of the recipe. The full instructions are below in the recipe card.

    1. Place cheesecake on a cutting board and cut into 6 even slices.
    2. Insert a popsicle stick into each slice from the wide end through the middle of the cheesecake, as far into the cheesecake as you can while ensuring it doesn't poke through the other side.
    3. In a small microwave-safe bowl, melt the white chocolate chips for 20 seconds. Stir and reheat as needed. Add coconut oil or shortening if the chocolate is not as smooth as you'd like after melting.
    4. Holding one cheesecake stick over the bowl of melted chocolate, use a spoon to smooth 2 Tablespoons of white chocolate all over the cheesecake.
    5. We chose to leave the wide end bare, but you can cover up that side, too.
    6. Place the cheesecake on a plate, cookie sheet, or even back on the cutting board and garnish with sprinkles. Repeat with all cheesecake slices
    7. Place the cheesecakes in the refrigerator for an hour to allow the candy melts and decorations before serving.

    Storage

    The cheesecake sticks can be stored in an airtight container in the fridge for up to 5  days or in the freezer for up to 3 months.

    Expert Tip: If you don't have white chocolate chips on hand, you can use white candy melts instead.

    Yes, you can use any flavor of cheesecake that you like! We've made these with strawberry and chocolate cheesecake before and they were both delicious.

    Do I have to use white chocolate chips?

    No, you can use milk chocolate or dark chocolate if you prefer. You could even use colored candy melts instead of white chocolate.

    Can I freeze cheesecake sticks?

    Yes, you can freeze these for up to 3 months. Store them in an airtight container in the freezer.
