    Cookie Ingredients

    • unsalted butter, softened
    • light brown sugar, packed
    • granulated white sugar
    • large eggs, room temperature
    • light corn syrup
    • pure vanilla extract
    • all-purpose flour
    • Hershey dark cocoa powder
    • cornstarch
    • baking soda
    • Kosher salt

    Vanilla Frosting

    • unsalted butter
    • confectioners sugar
    • heavy whipping cream
    • pure vanilla extract
    • heath bar, chopped

    Equipment

    Instructions

    This is an overview of the recipe. The full instructions are below in the recipe card.

    1. Preheat the oven to 350°F. Line two cookie sheets with a silicone baking mat.
    2. Using a standing mixer with paddles attached, cream the butter, sugar, light brown sugar, eggs, corn syrup, and vanilla until light and fluffy, about 5-7 minutes.
    3. In a medium bowl, whisk the flour, cocoa powder, cornstarch, salt, and baking soda.
    4. Gradually beat the dry ingredients into the wet until a dough forms.
    5. Using a medium cookie scoop, scoop out the dough mound into your hand and roll it into a ball. Place onto the cookie sheet and lightly press into a thick disk.
    6. Bake in the preheated oven for 15-18 minutes or until firm around the edge.
    7. Allow the cookies to cool for a few minutes on the baking sheet. Then move the cookies to a cooling rack to cool completely.

    To make the vanilla frosting

    1. Use a standing mixer with the paddle attachment, and beat the butter, powdered sugar, vanilla, and whipping cream until combined, smooth, and holds a peak.
    2. Scoop the frosting into the piping bag. Pipe a tight spiral onto the top of the cookie.
    3. Sprinkle chopped heath bars on top of each cookie.

    Storage

    These cookies can be stored in an airtight covered container for up to five days. Because of the butter in the frosting, I recommend storing these cookies in the fridge.

    Expert Tip:  If you don't have a piping bag, you can use a zip-top bag with the corner snipped off.
