- 4 quarts water (for pasta)
- 1 teaspoon salt (for the pasta water)
- 8 ounces rotini pasta
Prepare the chicken Caesar pasta salad
- 2 cups chopped romaine lettuce
- 1½ cups Caesar dressing
- ½ cup grated Parmesan cheese
- 1 cup croutons
- 2 cups cooked chicken Note 1
Instructions
- In a large pasta pot, bring 4 quarts water and 1 teaspoon salt to a boil. Add 8 ounces rotini pasta and cook according to package directions until al dente. Drain the water and rinse under cold water to cool. Note 1
- In a large mixing bowl, add the cooled pasta, 2 cups chopped romaine lettuce, 1½ cups Caesar dressing, ½ cup grated Parmesan cheese, and 1 cup croutons.
- Top with 2 cups cooked chicken. Serve immediately or chill in the refrigerator for 3-4 hours and serve for a cold pasta salad.
NOTES
- Rotisserie chicken works perfectly for this recipe—it's flavorful, tender, and a huge time-saver! Note 1: Be sure to drain all the water off the pasta so the dressing does not get watery. Note 2: For the cooked chicken, you can use rotisserie chicken or Instant Pot Shredded Chicken.
