Ingredients
Oreo Crust
- 25 chocolate cream cookies crushed
- 6 Tablespoons unsalted butter melted
Whipped Mint Pie
- 1 cup heavy whipping cream
- 8 ounces cream cheese , softened
- ¾ cup confectioners sugar
- 1 teaspoon pure vanilla extract
- 1 teaspoon peppermint extract
- Green food gel
- 1 cup chopped chocolate cream cookies optional garnish
- non stick cooking spray
Instructions
- Preheat the oven to 350°F. Prepare a pie dish by spraying with nonstick spray and set aside.
- In a large mixing bowl, stir together the crushed crushed chocolate cream cookies and melted butter until well combined and the cookie crumbles are well coated with the butter.
- Pour the chocolate cookie crumble mixture into the prepared pie dish. Press the cookie crumbles into the bottom and sides of the dish to create a crust.
- Bake in the preheated oven for 8 minutes. Then remove the cookie crust from the oven and let cool completely.
- In a large mixing bowl use a hand mixer with beaters attached and whip the cream cheese until smooth.
- To the whipped cream cheese blend in confectioners' sugar and whip until creamy. The mixture will thin slightly with the addition of the sugar.
- Add in both vanilla extract, peppermint extract, and green food gel. Make a darker green, as it will lighten when the heavy cream is added. Whip the mixture until ingredients are smooth and combined.
- In a separate mixing bowl, add the heavy cream. Use the hand mixer with beaters attached and whip until stiff peaks are formed, about 5 minutes. Start on low speed and increase to high as the mixture thickens.
- Fold the whipped cream mixture into the cream cheese mixture until both are incorporated and no streaks of white remain, about 2 minutes.
- Take the cooled pie dish with the oreo crust inside, and pour this whipped mixture onto the crust.
