    Grasshopper Pie Ingredients

    • chocolate cream cookies
    • unsalted butter
    • heavy whipping cream
    • cream cheese
    • confectioners sugar
    • pure vanilla extract
    • peppermint extract
    • Green food gel
    • non stick cooking spray

    🔪 Instructions

    Step 1: In a large bowl combine the Oreo crumbs and melted butter and mix until a sand-like texture.

    Step 2: Press the Oreo crust mixture into the bottom of your pie. Bake the crust in a 350°F oven for 8 minutes.

    Step 3: While the crust cools, beat the cream cheese in a large bowl until light and fluffy.

    Step 4: To the whipped cream cheese blend in confectioners' sugar and whip until creamy.

    Step 5: Add in vanilla extract, peppermint extract, and green food gel.

    Step 6: Whip the mixture until the ingredients are smooth and combined.

    Step 7: In a separate mixing bowl, add the heavy cream. Use the hand mixer with beaters attached and whip until stiff peaks are formed, about 5 minutes.

    Step 8: Fold the whipped cream mixture into the cream cheese mixture until both are incorporated and no streaks of white remain about 2 minutes.

    Step 9: Take the cooled pie dish with the Oreo crust inside, and pour this whipped mixture onto the crust. Spread evenly.

    Step 10: Top with crushed Oreo cookies and then chill for at least 6 hours before serving.

    👩🏻‍🍳 Eileen's Tips for Success

    • For the best results for a great Grasshopper pie, be sure that your cream cheese is completely at room temperature before you start to make your minty mousse filling, otherwise, you will have a lumpy filling rather than a smooth one. 
    • I highly recommend that you use a green food coloring gel, as the liquid can make your mint filling watery. 
    • I use a hand mixer to make the batter, however, you can use any type of electric mixer, a stand mixer also works great.

    Do you want to change up this recipe? Here are some ways that you increase the flavor of this dish.

    • Instead of topping this delicious grasshopper pie with crushed chocolate cookies, you could also top it with chocolate curls for an elegant touch. 
    • Want to add even more chocolate flavor? Feel free to mix in some chocolate shavings into the minty filling for a little crunch and extra flavor. 
    • Swap out the chocolate cookie crust, a vanilla cookie crust, or even a graham cracker crust if you want something a little different. 
    • Don't want to make homemade whipped cream? You can use Cool Whip or even marshmallow fluff instead. 

    ❄️ Make ahead, storage, and freezer tips

    Make ahead - One great thing about this creamy grasshopper pie is that you can make it ahead of time. Simply cover and refrigerate for up to two days before serving. 

    Storage - If you have leftovers, this pie will keep well in the refrigerator for a few days. Just be sure to cover it tightly with plastic wrap or foil to prevent it from drying out. 

    Freezer - This pie also freezes well! Wrap it tightly in plastic wrap and place it in a freezer-safe container or zip-top bag. Thaw overnight in the refrigerator before serving.

    Ingredients

    Oreo Crust

    • 25 chocolate cream cookies crushed
    • 6 Tablespoons unsalted butter melted

    Whipped Mint Pie

    • 1 cup heavy whipping cream
    • 8 ounces cream cheese , softened
    • ¾ cup confectioners sugar
    • 1 teaspoon pure vanilla extract
    • 1 teaspoon peppermint extract
    • Green food gel
    • 1 cup chopped chocolate cream cookies optional garnish
    • non stick cooking spray

    Instructions

    • Preheat the oven to 350°F. Prepare a pie dish by spraying with nonstick spray and set aside.
    • In a large mixing bowl, stir together the crushed crushed chocolate cream cookies and melted butter until well combined and the cookie crumbles are well coated with the butter.
    • Pour the chocolate cookie crumble mixture into the prepared pie dish. Press the cookie crumbles into the bottom and sides of the dish to create a crust.
    • Bake in the preheated oven for 8 minutes. Then remove the cookie crust from the oven and let cool completely.
    • In a large mixing bowl use a hand mixer with beaters attached and whip the cream cheese until smooth.
    • To the whipped cream cheese blend in confectioners' sugar and whip until creamy. The mixture will thin slightly with the addition of the sugar.
    • Add in both vanilla extract, peppermint extract, and green food gel. Make a darker green, as it will lighten when the heavy cream is added. Whip the mixture until ingredients are smooth and combined.
    • In a separate mixing bowl, add the heavy cream. Use the hand mixer with beaters attached and whip until stiff peaks are formed, about 5 minutes. Start on low speed and increase to high as the mixture thickens.
    • Fold the whipped cream mixture into the cream cheese mixture until both are incorporated and no streaks of white remain, about 2 minutes.
    • Take the cooled pie dish with the oreo crust inside, and pour this whipped mixture onto the crust.
    • Spread evenly in the dish, then top with extra crushed oreos.
    • Let this dessert chill in the refrigerator for at least 6 hours.
    • Cut, serve and enjoy!

    Note 1: I use Oreo cookies for this recipe but any chocolate sandwich cookie will work.
