Everyone needs a delicious protein-packed tortilla roll-ups recipe! Why? They are ridiculously delicious and my easy recipe is one step better because it's loaded with fresh mouthwatering roast beef. Ready in minutes, these tasty treats are perfect for so many occasions, from an after school snack to feed a hungry crowd at a family party.

Roast Beef Tortilla Rollups are a favorite of mine. So versatile, I make these for the family parties, beach days, east lunch, tailgating, I could go on and on.

My new favorite is bringing a couple of trays of these roast beef rollups to our lacrosse tourneys. They are perfect for the girls to snack on in between games. We bring a tray for the parents too, we need to stay fortified and these definitely hit the spot. 

Whether I need to get a quick lunch for my girls before practice or feed the team at a tournament, these roast beef rollups deliver flavor. I use the deli-sliced roast beef, shredded cheddar cheese, and whipped cream cheese that I add a little extra to for flavoring.

For the parents, a little horseradish goes into the whipped cream cheese. The kid's rollups I season with green onion and Italian Seasonings. 

How To Make Roast Beef Tortilla Rollups

  1. Blend the cream cheese with chopped green onion, garlic powder, onion powder, Italian seasoning, black pepper, and salt.
  2. Layout the tortillas and spread the whipped cheese on the tortillas.
  3. Place the roast beef on the cheese layer. 
  4. Sprinkle with the cheddar cheese.
  5. Add some baby spinach. 
  6. Roll up the tortillas. 
  7. Slice and serve.

I choose roast beef for these rollups because I appreciate the benefits beef adds to my family's diet. The NY Beef Council has a wonderful website with lots of great nutritional information, recipes, and an all-around great source for information on beef. 3 ounces serving of beef provides 25 grams of protein, which is half of your daily protein.

Roast Beef Tortilla Rollup FAQs

What type of tortillas do I use to make rollups?

Use your family's favorites.  This is where you can vary the tortillas. Use gluten-free, spinach, sun-dried tomato, or whole wheat. I usually make a few different ones so everyone is happy. 

How long do tortilla rollups last?

They are at their best flavor in the first 24 hours. Tortilla rollups will keep refrigerated up to 3 days. 

Can I freeze these tortilla rollups?

The sandwich rolls can be frozen for up to two months. When they are made, slice them and place them on a baking tray in the freezer for about an hour. Then they can be placed in a freezer-safe bag for 2 months.

Variations for Tortilla Rollups

  • Cheeses: Swiss, fontina, Gruyere, Colby jack, provolone
  • Add roasted red peppers, artichokes, or chopped bacon.
  • Lettuce and tomato in lieu of spinach
  • In lieu of whipped cream cheese, use hummus.
  • Leftover roast beef is also perfect in these rollups.

Cream Cheese Spread

  • 8 ounces whipped cream cheese
  • 2 green onions, diced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon black pepper
  • ½ teaspoon garlic salt

Tortilla Rollup Ingredients

  • 5 large tortilla wraps Spinach is used for this wrap
  • 1 ½ pound roast beef, sliced delicatessen style
  • 2 cups baby spinach
  • 1 ½ cups shredded cheddar cheese

Instructions

How to make Cream Cheese Spread

  • In a small bowl, combine the whipped cream cheese, diced green onions, Italian seasoning, black pepper, and garlic salt. Set aside.

How to Make Roast Beef Tortilla Rollups

  • Evenly distribute the cream cheese spread on each tortilla.
  • Place 2-3 pieces of roast beef evenly on each tortilla.
  • Evenly spread baby spinach on each tortilla.
  • Sprinkle even amounts of shredded cheddar cheese on each tortilla.
  • Roll each tortilla up tightly.
  • Slice and serve the tortillas. To serve later, see notes.

Notes

Note 1: To make the tortilla wraps ahead of time, wrap the tortillas in plastic before slicing. Store in the fridge overnight, slice and serve.
