Instant Pot Baked Potatoes are the perfect side dish for any meal! They are so easy to make and come out perfectly cooked every time. Plus, they take very little effort to make when you need a side dish or weeknight meal in a hurry.

  • large russet potatoes, and Yukon gold potatoes can also be used

  • Vegetable Scrubber
  • Glass Measuring Cups
  • Tongs

Instructions

This is an overview of the recipe. The full instructions are below in the recipe card.

Step 1: Place a steamer basket or metal trivet inside the vessel. Add 1 cup of water to the bottom of the vessel.

Step 2: Clean and scrub any dirt off each potato. Lightly scrub with a scrub brush and warm water. Poke the potatoes with a fork to prevent them from exploding in the pressure cooker.

Step 3: Add potatoes on top of the trivet. Close the lid on the Instant Pot and close the sealing valve.

Step 4: Set the Instant Pot to High Pressure for 40 minutes.

Step 5: Allow a natural release for about 15 minutes before manually releasing the remaining pressure by bringing the valve toward you.

Step 6: Remove each potato with tongs as they are hot.

Step 7: Transfer to your serving dish or plate. Cut the potato down the middle and add your favorite topping! You can add butter, sour cream, cheese, bacon, and green onions!

Storage

Leftover baked potatoes can be stored in the fridge for up to 5 days in a covered airtight container.

Reheat in the oven on 350°F until heated through, about 10 minutes.

The taters can also be reheated in the microwave on high power for 1-2 minutes per potato.

Expert Tips

Expert Tip: I highly recommend using the 6-quart Instant Pot for this recipe. If you have a smaller instant pot, you can still make this recipe, but you may need to cook the potatoes in batches.

  • The size of the potatoes can affect cooking time. If using smaller potatoes, reduce the cooking time by 1 minute.

It takes about 40 minutes to cook baked potatoes in an Instant Pot.

How do you make baked potatoes crispy, in the Instant Pot?

After the potatoes are cooked all the way through, you can remove them and drain the water. If you have an Instant Pot air fryer lid you can crisp the skin at 390°F for 4 to 5 minutes.

How do I crisp the skin of baked potatoes in the oven?

Preheat the oven to 400°F. Rub the potatoes with olive oil and some Kosher salt, optional. Place potatoes on a sheet pan; bake 10 minutes or until the skin is crispy.

Can I make sweet potatoes in the Instant Pot?

Yes, you can! You can use this same recipe, but cook them for 20 minutes at High Pressure.

Is it necessary to poke holes in the potatoes before cooking in the pressure cooker?

It is absolutely necessary to poke holes in the potatoes before they are cooked in the Instant Pot. This prevents the potatoes from exploding.

  • Once the potatoes have cooked, Allow the pot to naturally release for about 15 minutes. At this point, if pressure is still being released, manually release the remaining pressure.
  • Open the lid and carefully remove each potato with tongs as they are hot.
  • Transfer to your serving dish or plate. Cut the potato down the middle and add your favorite topping! You can add butter, sour cream, cheese, bacon, and green onions!
