These Slow Cooker Pulled Pork Stuffed Potatoes are a great way to have a hearty dinner without spending too many hours in the kitchen. These potatoes are perfect for weeknights or holidays!

Stuffed potatoes are one of my favorite comfort foods, and I love making them with flavorful pulled pork. These slow cooker pulled pork stuffed potatoes make for an easy weeknight meal or even a fun dish to bring to a potluck. They're easy to make and there's plenty of room for customization, so you can add your own twist!

Ingredients

  • Russet potatoes, scrubbed and pierced with a knife
  • boneless pork loin chops bone-in can be used
  • salt
  • ground black pepper
  • barbeque sauce homemade or store-bought
  • cheddar cheese, shredded
  • green onion, chopped optional garnish
  • non-stick cooking spray

Equipment

  • Slow Cooker
  • aluminum foil
  • knife
  • meat claw

Instructions

  1. Prepare the slow cooker by spritzing the liner with nonstick cooking spray.
  2. Place the pork loin chops in the bottom of the slow cooker and season with salt and black pepper. Top with the barbecue sauce.
  3. Place a layer of aluminum foil over the pork. Place the potatoes over the foil.
  4. Cover and cook on low for 6 to 7 hours or high for 3 to 4 hours or until the potatoes are cooked through.
  5. Carefully remove the potatoes and foil from the slow cooker. Set aside.
  6. Shred the pork with two forks
  7. Split the potatoes open and top with pulled pork and shredded cheese.
  8. Serve with any topping desired such as sour cream, sliced green onions, additional barbecue sauce, or cooked and crumbled bacon.

Storage

Fridge: The pulled pork and potatoes can be stored in the refrigerator for up to 3 days in a covered airtight container.

Freezer: These potatoes can also be frozen for up to 2 months. Thaw in the refrigerator overnight before reheating.

Reheating: Reheat the potatoes and pork in a 350°F oven until warmed through. Or in the microwave for  1 to 2 minutes.

Expert Tips

Expert Tip: If you don't have time to slow cook the potatoes, you can bake them in a 400°F oven for 30 to 40 minutes or until cooked through.

Frequently Asked Questions

Does pulled pork need liquid in a slow cooker?

There is no need for liquid when slow-cooking pulled pork, as the meat will release juices that will flavor the potatoes. If you do choose to add extra liquid, be sure to adjust your seasonings accordingly.

Can I make these potatoes in advance?

Yes! These potatoes can be made up to 3 days in advance. Just store them in the fridge and reheat them before serving.

How do you keep pulled pork moist?

The BBQ sauce in this recipe should keep your pork chops moist.

Variations
