These slow cooker pulled pork stuffed potatoes make for an easy weeknight meal or even a fun dish to bring to a potluck. They're easy to make and there's plenty of room for customization, so you can add your own twist!

- boneless pork loin chops bone-in can be used
- salt
- ground black pepper
- barbeque sauce homemade or store-bought
- cheddar cheese, shredded
- green onion, chopped optional garnish

- Prepare the slow cooker by spritzing the liner with nonstick cooking spray.
- Place the pork loin chops in the bottom of the slow cooker and season with salt and black pepper. Top with the barbecue sauce.
- Place a layer of aluminum foil over the pork. Place the potatoes over the foil.
- Cover and cook on low for 6 to 7 hours or high for 3 to 4 hours or until the potatoes are cooked through.
- Carefully remove the potatoes and foil from the slow cooker. Set aside.
- Shred the pork with two forks
- Split the potatoes open and top with pulled pork and shredded cheese.
- Serve with any topping desired such as sour cream, sliced green onions, additional barbecue sauce, or cooked and crumbled bacon.
Storage
Fridge: The pulled pork and potatoes can be stored in the refrigerator for up to 3 days in a covered airtight container.
Freezer: These potatoes can also be frozen for up to 2 months. Thaw in the refrigerator overnight before reheating.
Reheating: Reheat the potatoes and pork in a 350°F oven until warmed through. Or in the microwave for 1 to 2 minutes.

Expert Tip: If you don't have time to slow cook the potatoes, you can bake them in a 400°F oven for 30 to 40 minutes or until cooked through.
