    Air Fryer Twice Baked Potatoes

    Air Fryer Twice Baked Potatoes takes the most delicious spuds one step further to flavor town. The potato skin is extra crispy with a light and fluffy interior. It's seasoned to perfection and topped with crunchy bacon and warm gooey melted cheese.

    • Heavy cream

    🔪 Instructions

    First 4 steps to make air fryer baked potatoes, 1 potatoes in the air fryer 2, Baked potatoes scooped put of all their pulp. 3. A large mixing bowl with potatoes, cheese, sour cream, heavy cream in a bowl, 4th photo, the stuffed potatoes with the cheesy filling.

    Step 1: Wash the potatoes. Use a fork to puncture holes around the outside of the potato. Place the potatoes in a single layer in the basket of the air fryer leaving some room between the potatoes. Do not overcrowd the potatoes. Cook at 400°F for 20 minutes three times, rotating potatoes each time

    Step 2: Cut the potatoes in half longways and using a spoon, scoop out the potato flesh.

    Step 3: Add the cooked potato to a large mixing bowl and mix in half of the cheese, butter, heavy cream, sour cream, and seasoning.

    Step 4: Add the mashed potato mixture into the hollowed-out potato shells. Top with shredded cheese.

    Step 5: Sprinkle the shredded cheese on the stuffed potatoes and bake in the air fryer for another 5 minutes.

    Step 6: Top with your favorite toppings such as bacon bits, sour cream, chives, etc.

    How to store, reheat, and freeze

    The stuffed potatoes can be stored in a covered airtight container in the refrigerator for up to 3 days. Reheat at 350°F for about 5-6 minutes.

    Freezer: These potatoes can be baked ahead and frozen to enjoy later. The potatoes can be frozen in a freezer-safe airtight container for up to 4 months.

    To freeze, place the twice baked potatoes on a baking tray in the freezer for about an hour to semi freeze the potatoes. This will prevent them from sticking together. Then place them in the airtight freezer bag.

    Preheat the air fryer to 350°F, place the frozen potatoes into the air fryer, and cook for about 40 -50 minutes.

    • Use a fork to prick holes in the potatoes so they do not explode while cooking.
    • Mix the ingredients right after the potatoes are baked and warm to ensure a tasty stuffing.
    • Use room temperature butter so it easily absorbs into the potatoes.
    • Do not overcrowd the air fryer basket otherwise the potatoes will not get crispy and may have difficulty baking thru.

    Preheat the air fryer to 400°F, and place the frozen twice-baked potatoes in the air fryer. They should be cooked through in about 15 minutes.

    Ingredients

    • 3 large Russet Potatoes
    • 1 Tablespoon Homemade Seasoning Salt Note 1 or your favorite Seasoning Salt
    • 3 Tablespoons unsalted butter, softened
    • ¼ cup heavy cream
    • ½ cup sour cream
    • ⅔ cup cheddar cheese, shredded Note 2½
    • 3 slices bacon, cooked and crumbled

    Instructions

    • Wash the potatoes and using a fork prick holes around the potato. ( This ensures air to escape and the potato will not explode)                 
    • Preheat the air fryer to 400°F.
    • Place the potatoes in the air fryer basket, leave room so they do not touch. Do not over crowd the potatoes.
    • Bake the potatoes at 400°F for 60 minutes, rotating the potatoes every 20 minutes. The potatoes will be rotated 3 times. The potatoes will be soft and a fork or toothpick should easily slide into the skin of the potato.  
    • Cut the potatoes in half ,long ways. Use a spoon to scoop out the inside and place the flesh of the potato in a large mixing bowl.
    •   To the large mixing bowl, mix in half of the shredded cheese, the unsalted butter, heavy cream, sour cream, and seasoning salt.
    • Add the mixture back in the hollowed-out potatoes. Top with the remaining shredded cheese and bake in air fryer on 350 for 5 minutes.
    • Top with bacon, sour cream, chives, and any of your favorite toppings.

    Note 1: In lieu of the seasoning salt, you can use ½ teaspoon each of salt, black pepper, onion powder, and garlic powder as a substitute. 
    Note 2: Use your favorite cheese. We recommend grating the cheese instead if using pre-shredded cheese that usually has a waxy coating which makes it more difficult to melt.  Any combo of cheddar, Monterey Jack, Gruyere, Colby Jack, etc is delicious.
