- Place insert or trivet inside the Instant Pot. Put the ears of corn on top of the trivet.
- Add cold water to the insert. Close the lid and be sure to close the vent to the sealing position.
- Press the high pressure/manual button and set the cooking time to 2 minutes. It will take about 5-10 minutes for the pot to pressurize and 2 minutes to start counting down.
- Let the pot naturally release for 5 minutes. Then, quick release any remaining pressure.
- Use thongs to remove the corn from the Instant Pot. Season with your favorite toppings of your choice and serve.
Storage
Leftover corn can be stored in a covered airtight container or plastic storage bag, in the refrigerator for up to 3 days.
Corn can also be taken off the cob after it is cooked and frozen. Remove the corn kernels from the cob and spread them out on a large rimmed baking sheet in the freezer until the corn is frozen for about 1 hour. Then place the corn in a freezer-safe bag in the freezer for up to 3 months.
Defrost and add to salads, taco, soup recipes, etc.
Expert Tips
Expert Tip: Use either the trivet that comes with the Instant pot or a steamer basket. Both work well for cooking corn.
- The cobs can be big so you may have to cut them into smaller pieces to fit the inner pot. We recipe tested using a 6-quart pot.
- For smaller electric pressure cookers, you can slice your cobs into smaller pieces to cook.
- There is no need to change the process or cooking time.
- I use a steamer basket, but the insert the Instant Pot comes with is just fine. You just don’t want the corn touching the bottom of the pot.
