    • onion, peeled and diced
    • green bell pepper, seeded and diced
    • Ritz crackers, crushed, any butter crackers will work
    • sharp cheddar cheese, shredded
    • large eggs
    • whole milk
    • salt
    • ground black pepper

    • light brown sugar
    • yellow mustard

    Instructions

    1. Preheat the oven to 350°F. Line baking pan with aluminum foil, set aside.

    Form the meatloaf ingredients into an oval shape on the baking pan.
    1. Form the meat mixture into a loaf shape and bake for 30 minutes.

    1. While the meatloaf is baking, in a medium mixing bowl, combine ketchup, brown sugar, and mustard. Set aside.

    1. After 30 minutes in the oven, remove the meatloaf from the oven and spread the ketchup glaze all over the top of the meatloaf

    Storage

    The Cracker Barrel Meatloaf can be stored in the refrigerator in an airtight covered container for up to 3 days. It can also be frozen for up to 3 months.

    • 1 small yellow onion (peeled and diced)
    • 1 small green bell pepper (seeded and diced)
    • 1 ½ sleeve Ritz crackers (crushed) any butter cracker will work
    • ¾ cup cheddar cheese (shredded)
    • 3 large eggs
    • ½ cup whole milk
    • 1 teaspoon kosher salt
    • ¼ teaspoon black pepper

    Meatloaf Glaze

    • ¾ cup ketchup
    • 2 ½ Tablespoons light brown sugar
    • 1 ½ teaspoons yellow mustard

    Instructions

    How to make the meatloaf

    • Preheat oven to 350°F/177°C. Line a large baking pan with aluminum foil, set aside.
    • In a large mixing bowl, combine 2 pounds ground beef,1 small yellow onion (peeled and diced), 1 small green bell pepper (seeded and diced), 1 ½ sleeve Ritz crackers (crushed), ¾ cup cheddar cheese (shredded), 3 large eggs, ½ cup whole milk, 1 teaspoon kosher salt, and ¼ teaspoon black pepper. Mix ingredients with clean hands or a wooden spoon until well combined.
    • On the prepared baking pan, form the beef mixture into a loaf shape. Place the baking pan into the preheated oven for 30 minutes.

    How to make the meatloaf glaze

    • While the meatloaf is baking, in a medium-sized mixing bowl, combine ¾ cup ketchup, 2 ½ Tablespoons light brown sugar, and 1 ½ teaspoons yellow mustard Set aside.
    • After 30 minutes in the oven, remove the meatloaf from the oven and spread the ketchup glaze all over the top of the meatloaf.
    • Place the meatloaf back into the hot oven. Bake for another 40 minutes. The meatloaf will be cooked through and the internal temperature will be 160°F Remove from oven and let rest for 10 minutes.
    • Slice and serve!
