- Preheat the oven to 350°F. Line baking pan with aluminum foil, set aside.

- Combine the meatloaf ingredients together.

- Form the meat mixture into a loaf shape and bake for 30 minutes.

- 2 ½ Tablespoons light brown sugar
- 1 ½ teaspoons yellow mustard
Instructions
How to make the meatloaf
- Preheat oven to 350°F/177°C. Line a large baking pan with aluminum foil, set aside.
- In a large mixing bowl, combine 2 pounds ground beef,1 small yellow onion (peeled and diced), 1 small green bell pepper (seeded and diced), 1 ½ sleeve Ritz crackers (crushed), ¾ cup cheddar cheese (shredded), 3 large eggs, ½ cup whole milk, 1 teaspoon kosher salt, and ¼ teaspoon black pepper. Mix ingredients with clean hands or a wooden spoon until well combined.
- On the prepared baking pan, form the beef mixture into a loaf shape. Place the baking pan into the preheated oven for 30 minutes.
How to make the meatloaf glaze
- While the meatloaf is baking, in a medium-sized mixing bowl, combine ¾ cup ketchup, 2 ½ Tablespoons light brown sugar, and 1 ½ teaspoons yellow mustard Set aside.
- After 30 minutes in the oven, remove the meatloaf from the oven and spread the ketchup glaze all over the top of the meatloaf.
- Place the meatloaf back into the hot oven. Bake for another 40 minutes. The meatloaf will be cooked through and the internal temperature will be 160°F Remove from oven and let rest for 10 minutes.
- Slice and serve!
