    Funeral Potatoes Recipe

    Funeral Potatoes Recipe, is a creamy hash brown casserole loaded with cheese with a crunchy buttery topping. This is a classic casserole that is great for feeding a crowd or an easy side dish for any meal.

    • Whether feeding your family, large crowd, or bringing to a pot luck, this cheesy potato casserole  is both easy and a crowd favorite.
    • It travels well for bringing to friends and family which is a huge plus for any type of gathering.

    Ingredients

    Ingredients hash browns, cream of chicken soup, cheese, corned flakes, sour cream, and butter.
    • Use either store bought hash browns that have been defrosted or dice your own using Idaho potatoes.
    • Use unsalted butter so the sodium intake can be controlled.
    • Homemade cream of chicken soup or store bought is fine.
    • Corn Flake topping adds a crunchy topping.
    • Shredded cheddar cheese give another level of flavor.

    Instructions

    This is an overview of the recipe. The full instructions are below in the recipe card.

    1. In a large bowl, combine, sour cream, cream of chicken soup, and ½ cup of the melted butter. Add seasoning, if desired.
    2. Stir in the hash browns.
    3. Mix in the shredded cheese.
    4. Gently mix all ingredients until combined.

    5. Combine the crushed corn flakes with the remaining melted butter.

    6. Transfer the potato mixture to a greased casserole dish.

    7. Sprinkle the buttered crumbled corn flakes over the potatoes. Bake at 350°F for 40 - 45 minutes.

    Storage

    Leftovers can be kept in the fridge for 2-3 days. Reheat in the oven at 350°F until warm, about 10 minutes. If using a microwave, follow manufacturer's instructions.

    Frequently asked questions

    Can the funeral potatoes casserole be frozen?

    Absolutely.
    When freezing the casserole, prepare as instructed but do not put the corn flake crumbles on top. When ready to cook, defrost the casserole overnight in the fridge. Then add the corn flake crumbles right before placing in the oven.

    Why are they called Funeral Potatoes?

    This is an old classic recipe that well, is a very popular dish brought to the life celebration after Mormon funerals in the Western and Southern United States.
    The name of this creamy luscious potatoes casserole may be strange but the end results, outstanding. I like to call them Cheesy Hash Browns but it is fun to see the reactions to friends when I tell them the name of this casserole.

    Can I use fresh potatoes instead of hash browns?

    If using fresh potatoes, use either Idaho or Yukon potatoes. Cut the potatoes into cubes. Soak the potatoes for about 30 minutes, Then drain the potatoes and place them in a cotton towel to wring dry.

    Eileens Tip: If using frozen hash browns, be sure to defrost the potatoes before beginning the recipe.

    • The casserole can be made ahead of time and reheated when ready to eat.

    Variations

    • Ranch Seasoning is used in our recipe. It can be left out or use any of your favorite dried herbs such as parsley, basil, or rosemary.
    • Cream of Celery or Cream of mushroom can replace cream of chicken for variety.
    • Crumbled Ritz crackers or Panko bread crumbs can be used in lieu of the crumbled corn flakes.
    • Change up the cheese and use Colby Jack, Gouda, or a blend with the cheddar cheese.

    Serving Suggestions

    Some of my favorite dinner suggestions to pair with the Funeral Potatoes would be crispy Baked Chicken Leg Quarters, Oven Baked Chicken Breasts,  and Marinated Chicken Legs, and baked Parmesan Chicken Tenders.All of these chicken recipes are not only easy and delicious but great for feeding a crowd.

    Crock Pot Coffee Rubbed Brisket, is a favorite and is delicious with these cheesy hash brown potatoes. Cranberry Pot Roast is another great recipe paired to make with the casserole. Also, our Braised Pot Roast would be another perfect choice. It's a huge crowd pleaser in our house.

    Ingredients

    • 1½ cups sour cream
    • 10.5 ounce can, cream of chicken soup
    • 1 cup unsalted butter, melted and divided
    • 1 teaspoon ranch seasoning Note 1
    • 5 cups cubed hash browns, thawed use 2, 20-ounce bags, shredded hash browns can be used
    • 2 cups cheddar cheese, shredded Note 2
    • 2 cups corn flakes, crushed

    Instructions

    • Preheat oven to 350°F. Grease or spray with non-stick spray, a 9” x 13” baking dish. Set aside.
    • In a large mixing bowl, combine the sour cream, cream of chicken soup, ½ cup of the melted butter, and ranch seasoning.
    • Mix in the hash browns and shredded cheese.
    • Stir well to combine. Then fold the mixture into the prepared baking dish.
    • In a small bowl, combine the crushed Corn Flakes with remaining ½ cup of melted butter. Stir well to combine.
    • Sprinkle the butter corn flake crumble over the potato mixture.
    • Bake, uncovered for 40-45 minutes, until corn flake mixture appears dry, cheese is melted, and casserole is bubbly.

    NOTES

    Note 1: Feel free to change up the seasoning to any of your favorite seasonings such as Italian seasoning, parsley, and basil. 
    Note 2: It is best not use pre-shredded cheese and shred your own. Pre-shredded has a coating that makes it not melt as well.
