- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 Tablespoon olive oil (15 ml)
- 2 Tablespoons Dijon mustard
- 2 Tablespoons unsalted butter (30 g)
- 1 small shallot (finely chopped)
- 1 clove minced garlic
- 1 cup mushrooms (finely chopped) (100 g)
- 1 teaspoon fresh rosemary leaves or fresh thyme (chopped)
- 1 sheet puff pastry (thawed)
- 1 large egg (beaten) (for egg wash)
Instructions
- Preheat oven to 400°F (200°C).
- Season 1 pound beef tenderloin (cut into 1-inch cubes) with 1 teaspoon saltand ½ teaspoon black pepper. Heat 1 Tablespoon olive oil in a skillet over medium heat, and quickly sear beef on all sides, about 1–2 minutes. Remove and brush each piece with Dijon mustard.
- To make the mushroom mixture, in the same skillet, melt 2 Tablespoons unsalted butter. Add 1 cup mushrooms (finely chopped), 1 small shallot (finely chopped), 1 clove minced garlic, and 1 teaspoon fresh rosemary leaves or fresh thyme (chopped). Cook until the mixture is dry and the moisture has evaporated. Let cool.
- Roll out 1 sheet puff pastry (thawed) and cut into squares large enough to wrap each piece of beef.
- Add a spoonful of mushroom mixture to the center of each square. Place a beef cube on top. Gather the four corners of the pastry, pinch tightly, and seal well on all edges.
- Place parcels seam-side down on a lined baking tray. Brush tops with the egg wash.
- Bake in the preheated oven for 12–15 minutes, until pastry is golden brown.
- Serve warm.
