- Preheat the oven to 400°F/204°C.
- If desired, trim excess fat from the chicken thighs. Brush the chicken thighs on both sides with olive oil. Then sprinkle the chicken dry rub on all sides of the chicken thighs. Press the rub into the skin of the chicken thighs.
- Place the prepared chicken thighs with skin side up into a large baking pan with a wire rack. ( I prefer to use the wire rack so the chicken stays crispy but placing right into the baking pan will work)
- Put the try on the center rack of the preheated oven and bake for 35-40 minutes. (no need to flip the thighs while baking). The chicken thighs will cook through, juices will run clear and an instant-read oven thermometer will read 165°F when the thighs are finished baking.
- Remove from the oven. Let rest for 10 minutes to allow the juices to set before serving with your favorite sides.

Storage - Leftover chicken thighs can be stored in an airtight container in the fridge for up to 3 days.
Reheating - To reheat, place them on a baking sheet and warm through in a 350°F/177°C oven until they reach 165°F.
Freezing - To freeze leftovers, let the chicken cool completely, then wrap tightly and freeze for up to 3 months. Thaw in the fridge before reheating.
