    Instructions

    This is an overview of the recipe. The full instructions are below in the recipe card.

    1. Preheat the oven to 350°F. Place parchment paper on a baking sheet. Set aside.
    2. In a medium-size mixing bowl, whisk together dry ingredients: flour, baking powder, and salt. Set aside.
    3. In a large mixing bowl, use an electric hand mixer with beaters attached and cream the butter and sugar until creamy and light, about 5-7 minutes. The mixture will be light and fluffy with a pale yellow color when completely creamed together.
    4. To the butter mixture, blend in egg and lemon extract. Mix well.
    5. Slowly add dry ingredients and mix until combined. The dough may be a little crumbly. Shape the dough into a ball. Wrap it in plastic wrap. Place the dough in the refrigerator for at least 1 hour up to overnight.
    6. Turn the dough out onto a lightly floured surface sprinkled with powdered sugar or flour. Use a lightly floured rolling pin to roll out the dough to ¼ inch thickness.
    7. Use cookie cutters to create shapes.
    8. Carefully lift shaped cookies to the prepared baking sheet.
    9. Bake cookies for 7 to 9 minutes. Do not brown the cookies.
    10. Allow cookies to cool for at least 20 minutes on the baking sheet before carefully moving them to a cooling rack.
    11. After cooling, decorate as desired.
    12. Allow icing to dry before storing in an airtight container between layers of parchment paper.

    Royal Icing Directions

    1. In a large mixing bowl, mix confectioner sugar and meringue powder in a mixing bowl.
    2. Mix slowly to blend the two ingredients together.
    3. Slowly add 3 tablespoons of water and continue beating for 7 to 10 minutes or until the icing is smooth and fluffy.
    4. Add additional water a little at a time if a thinner consistency is desired.
    5. Frost the bunny cookies with royal icing.

    Storage

    Store the baked and decorated bunny cookies between layers of parchment paper in an airtight covered container for up to one week.

    How to Freeze

    The baked undecorated cookies can be frozen for up to 3 months. To freeze, place the baked cookies (do not decorate before freezing) on a large baking tray lined with parchment paper in the refrigerator for about an hour to set. The frozen cookies can then be placed in either a freezer-safe airtight container or freezer storage bag until ready to eat.

    When ready to decorate and enjoy the cookies, remove them from the freezer and defrost cookies in the refrigerator. Decorate as per instructions.

    Expert Tip: I recommend using a flat spatula to move the cookies to the baking sheet to help the cookies maintain their shape.

    Can I make these cookies ahead of time?

    Yes, you can make these cookies ahead of time. Just allow the royal icing to dry completely. Place a layer of parchment or wax paper between each layer of cookies before storing them in an airtight container. They can be made up to 3 days ahead of time.

    • You can use any shape cookie cutter you desire.
    • If you don't want to use icing, you can also sprinkle colored sugar on top of the cookies before baking them.

    How to make the cookies

    • 3 cups all-purpose flour
    • 2 teaspoons baking powder
    • ½ teaspoon salt

    Instructions

    • Preheat the oven to 350°F. Place parchment paper on a baking sheet. Set aside.

    • In a large mixing bowl, blend the butter and sugar until creamy and light. Add egg and lemon extract. Mix well. Slowly add dry ingredients and mix until combined. The dough may be a little crumbly.
    • Turn out the dough onto a surface sprinkled with powdered sugar or flour. Press into a ball and then roll out to ¼ inch thickness. Wrap the dough in plastic wrap. Place the dough in the refrigerator for at least 1 hour up to overnight. Note 1
    • Use cookie cutters to create shapes. Carefully lift shaped cookies to the prepared baking sheet. Note 2
    • Bake cookies for 7 to 9 minutes. Do not brown the cookies. Allow cookies to cool for at least 20 minutes on the baking sheet before carefully moving them to a cooling rack.
    • After cooling, decorate using Royal Icing below.

    Royal Icing

    • In a bowl of an electric stand mixer using whisk attachment or hand mixer using a large mixing bowl, whisk together confectioners sugar and meringue powder
    • Slowly add 3 Tablespoons of water and continue beating for 7 to 10 minutes or until the icing is smooth and fluffy. Add additional water one Tablespoon at a time if a thinner consistency is desired.

    Decorate cookies

    • Decorate the cookies with royal icing. Sprinkle with the pastel sanding sugar. Place one or two mini marshmallows for the tail. Let the icing dry. Enjoy

    Note 1: At this point, the uncooked dough can be placed in the freezer in a freezer-safe bag,  wrapped well in plastic wrap, and placed in a freezer-safe bag for up to 3 months. When ready to continue with the baking instructions. Remove the dough from freezer and defrost overnight in the refrigerator. Follow remaining steps to make the cookies. 
    Note 2: Use a flat spatula to transport the cookies to help the unbaked shaped cookies to the baking sheet to help maintain their shape.
