Step 1: Wash and cut potatoes into wedges, about ½ inch thick. Soak them wedges in a bowl of cold water for about 20 minutes.
Step 2: Pre-heat grill to about 400°F/200°C. While the grill heats, drain the potatoes and discard the water. Dry potato wedges with a paper towel or cotton towel.
Step 3: In a large mixing bowl, combine and mix all the ingredients until well coated.
Step 4: Reduce the heat on the grill or grill pan down to medium-high heat, 375°F/190°C. Place potatoes on the grill and let them cook for at least 6 minutes, they will be softened and light golden brown. Then adjust potato wedges to get criss-cross marks on potato wedges. Potatoes should be done between 10-15 minutes.
Step 5: Turn the potatoes and grill the other side for another 6 to 7 minutes. Depending on how thick the potatoes were cut, you may need to adjust the time on the grill. Potatoes will be fork-tender when thoroughly cooked
Step 5: Remove potatoes from the grill to a bowl. Taste for seasoning, if needed adjust the salt or any other seasonings. Serve with your favorite dipping sauces. Enjoy.

Do you want to change up this recipe? Here are some ways that you increase the flavor of this dish.
Potatoes: While russet is my first choice, other potatoes to use a sturdy potato such as a Yukon Gold Potatoes, Red Potatoes, and even Sweet Potatoes would work well with this recipe.
- Baby potatoes can be used. I recommend using a grill basket as those potatoes are a bit delicate and can fall though the grill grates. Not an issue if using an indoor grill.
Spices: For a smoky flavor add a teaspoon of smoked paprika to the seasonings.
- Italian Seasoning would add a great level of flavor to the potatoes.
- Chili Seasoning will add a zesty flavor with a bit of spice.
- Try our Cajun Seasoning on the potatoes. Spicy and this will pair well with Air Fryer Turkey Burgers.
- Homemade seasoning salt is versatile and would be amazing on the crispy potato wedges.
Oil: Grapeseed oil or avocado oil would both be fabulous as alternatives to olive oil.

Make ahead: These potatoes are great to make in advance and reheated. They can be made up to 3 days. Store as you would leftovers in the refrigerator. Reheat in the oven at 350°F until warmed through, about 10 minutes.
Freezer Instructions: To make and freeze, lay the grilled potato wedges on a large baking tray. Be sure the wedges are not touching.
Place the tray in the freezer for 30 minutes to an hour. The wedges will be frozen and can be stored in a freezer bag up to 2 months.
Bake the wedges frozen, reheat at 400°F for about 15 minutes or until thawed and warmed through.
