Step 1: Cut potatoes into ½-inch wedges. Soak the wedges in a large bowl of cold water for about 20 minutes.
Step 2: Pre-heat the grill to about 400°F/200°C While the grill heats, drain the potatoes and discard the water. Dry the potato wedges off with a paper towel or cotton towel. If using a grill pan, heat it over medium heat.
Step 3: In a large mixing bowl, combine all ingredients until the potato wedges are well coated.
Step 4: Turn the grill or grill pan down to medium-high heat, 375°F/190°C. Place potatoes on the grill and let them cook for at least 6 minutes, they will be softened and light golden brown.
Step 5: Flip potatoes to grill the other side for another 6 to 7 minutes. Potatoes will be fork-tender when thoroughly cooked through.
Step 6: Taste for seasoning, if needed adjust seasonings. Serve with your favorite dipping sauces.
