    1. Coat the shrimp in flour, egg wash, and bread crumbs. Repeat until all shrimp are breaded.

    1. Lay the shrimp on a baking sheet while you reheat a large stockpot with oil over medium-high heat until it reaches 350°F.

    1. Once the oil is hot, fry the shrimp in batches or 5-6 until golden brown and crispy. Drain on a paper towel-lined baking sheet.

    Variations

    Do you want to change up this recipe? Here are some ways to vary the flavor of this recipe.

    • Seasoning Salt: I use my homemade seasoning. A store-bought blend can be used. Feel free to add more seasonings to the flour mixture, garlic powder, onion powder, lemon pepper seasoning, or extra black pepper. Be sure to season to your taste.
    • Cajun seasoning is another great option for seasoning this panko shrimp recipe.
    • Panko Bread Crumbs: Italian-flavored breadcrumbs can be used. The texture will vary using different bread crumbs.
    • Shrimp: Smaller shrimp can be used but we recommend larger shrimp for best results.

    Make ahead, storage, and freezer tips

    Make ahead - This recipe is best enjoyed fresh. If you want to save a little time in the kitchen you can bread the shrimp ahead and store them in a single layer in the fridge until you are ready to heat the oil and fry them. 

    Storage - Store leftover fried shrimp in a covered airtight container in the refrigerator for 2-3 days. 

    Freezing -  Unfortunately, fried shrimp does not freeze well. The breading will become soggy and the texture will change when reheated.

    Eileen's Tips for Success

    • The best way to test the temperature of hot oil is to use a candy thermometer. This way you know the oil is at the correct temperature to get crispy results every time. 
    • You can use fresh shrimp or even frozen. However, if you are using frozen shrimp, ensure the shrimp are thawed before cooking begins.
    • If you have a deep fryer in your kitchen feel free to use that instead of a large pot. 
    • To keep the panko fried shrimp crispy while it drains, place a wire rack on top of a baking sheet lined with paper towels, and rest the cooked shrimp on the rack to drain.
    • We love to serve this panko shrimp recipe with lemon wedges for garnish bowls of tartar sauce, and cocktail sauce for dipping. 
    • For best results do not overcrowd the pan while you are frying the shrimp.  Stick to no more than 6 shrimp at a time to prevent them from being soggy.

    Frequently Asked Questions

    What should the internal temperature of shrimp be? 

    The internal temperature of cooked shrimp should reach 145°F (63°C) for safety. This can be easily checked with a meat thermometer.

    What kind of oil should I use for deep frying? 

    I've found that using vegetable oil is the best for deep frying. However, peanut oil or any other high-heat cooking oil can be used. 

     How do I get breading to stick to my shrimp?

     To get breading to stick to your shrimp, make sure the shrimp is dry before coating it in flour, egg wash, and breadcrumbs.

    Ingredients

    • 3 cups canola oil
    • ½ cup all-purpose flour
    • 1 Tablespoon Seasoned salt Note 1
    • 2 large eggs
    • 2 cup plain panko bread crumbs
    • 1 to 1 ½ pounds jumbo shrimp peeled and deveined.
    • 1-2 large lemons

    Instructions

    • In a large stock pot over medium-high heat, add 3 cups canola oil and heat to 350°F. (Note 1)
    • While the oil is heating, in a shallow mixing bowl, whisk together ¼ cup all-purpose flour and 1 Tablespoon seasoned salt.
    • In a separate shallow mixing bowl, whisk 3 large eggs together. Set aside.
    • In a third shallow mixing bowl, add 2 cups Panko breadcrumbs.
    • Dredge shrimp with the seasoned flour mixture, then dip into the beaten eggs. Gently roll it in the Panko breadcrumbs.
    • Continue coating the shrimp until all are breaded.
    • Fry the shrimp in batches of 5 or 6 until golden brown color, about 5 minutes. Repeat this process until all of the shrimp have been fried.
    • Place the fried shrimp on paper towels or a cooling rack on a baking tray to drain any excess oil.
    • Serve the shrimp with lemon wedges as a garnish, optional.
