    No Bake Granola Bars Recipe

    These crunchy and hearty No Bake Granola Bars are so tasty. Way, way better than any store bought, preservative filled bars. They're super easy to make.  We use simple ingredients with many possible variations. Everyone from the kids to adults will enjoy these tasty treats.

    No Bake Granola Bars

    My family loves snacking granola bars. I find them to be so pricy and a box is gone in a day. So I decided to start playing around with ingredients and make my own. Even better, these are also no-bake bars. We love using almond butter but they can certainly be made with peanut butter which can be a bit more cost effective.

    Ingredients

    If you want the recipe to be gluten-free, be sure to use gluten-free rice cereal and oats.

    Ground flax seeds are simply flax seeds that have been finely ground. For my daughter, I do check that that I'm using a seed made in a gluten-free environment. You do not want to use whole seeds for this recipe. In a pinch, you can use a food processor to finely ground whole seeds.

    We love almond butter and use it regularly. If you aren't a fan, peanut butter is a fine substitute.

    Pure maple syrup can be used in lieu of honey. I find it sweeter, so add less and give a taste before adding more syrup.

    Step by Step Instructions

    Mix together dry ingredients in a large bowl. Rolled oats, rice cereal. and ground flax in a clear bowl, with other ingredients in measuring cups around the bowl.

    Melt together honey and coconut oil.

    Add in almond butter and vanilla extract until the almond butter is melted into the mixture.  A pan with melted coconut oil, almond butter, and vanilla extract with a bowl of rolled oats on the side.

    4. Pour the melted mixture over your dry ingredients. Mix well. Allow the mixture to cool for about 10 minutes.

    Place the mixture on parchment paper in a large casserole pan or cookie sheet. Evenly distribute. While the mixture is still warm, sprinkle chocolate chips evenly on top.

    With another sheet of parchment paper, place on top of your granola and chocolate chips. Press down well using your hands, or another hard item (such as a small cutting board, cookie sheet, etc.) This will melt your chocolate chips into the granola bars as well as making sure that your mixture is evenly pressed.

    For best results, place the granola mixture in the fridge for one hour up to overnight.

     

    Ingredient Variations

    • Add in your favorite nuts. Be sure to chop them into small pieces.
    • Nut butter are very interchangeable so feel free to vary the butter ingredient to your choice.
    • Coconut flakes are a wonderful addition.
    • Pure maple syrup can be used in lieu of honey.
    • Any dried fruit such as raisins, cranberries, and blueberries can be added in.

    Storage Tips

    Wrap individual granola bars in a covered container or sealable bag in the fridge for about one week.

    Can granola bars be frozen?

    Absolutely. We make a large batch and freeze some for another day. The pieces can be sealed in freezer safe bags. To defrost, remove from the freezer and leave overnight in the refrigerator.

    • 9x13 inch casserole dish
    • Parchment Paper

    Ingredients

    • 4 cups crisp rice cereal
    • 2⅔ cup old fashioned rolled oats
    • ⅔ cup ground flax seed
    • 1½ cups pure honey
    • ⅓ cup coconut oil
    • 1 cup almond or peanut butter
    • 2 teaspoons pure vanilla extract
    • ½ cup mini chocolate chips

    Instructions

    • Place parchment paper in a 9x13 casserole dish or on a large baking sheet.
    • Mix together your rice cereal, oats, and flaxseed in a large bowl. Set aside.
    • Heat a medium sized sauce pan over medium high heat, mix together honey and coconut oil in the pan until melted. Continue to stir occasionally and leave on until it starts to boil.
    • Remove the pan from the heat. Mix in almond butter (or peanut butter) and vanilla extract until the almond butter is completely melted into the mixture.
    • Pour the melted mixture from the sauce pan over the dry ingredients. Mix well. Allow the mixture to cool for about 10 minutes
    • Place the granola mixture over parchment paper in the prepared casserole dish or baking sheet. Evenly distribute the granola mixture.
    • While your granola mixture is still warm, sprinkle your chocolate chips evenly over the mixture.
    • Use another sheet of parchment paper to place on top of the granola and chocolate chips. Press down well using your hands, or another hard item (such as a small cutting board, cookie sheet, etc.) This will melt your chocolate chips into the granola bars as well as making sure that your mixture is evenly pressed.
    • Place the granola bars in the fridge for at least an hour to overnight before cutting into 32 squares.
    • Wrap the individual bars in plastic wrap. Keep in the bars in the fridge until ready to enjoy.

    NOTES

    Note 1: Be sure to refrigerate the granola mixture for at least an hour before cutting.
