Brownies

  • 1 cup unsalted butter, melted and cooled
  • 2 Tablespoon canola oil
  • 1 ¼ cup granulated white sugar
  • 1 cup light brown sugar, packed
  • 2 teaspoons pure vanilla extract
  • 4 large eggs
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • ¾ teaspoon Kosher salt
  • ½ teaspoon baking soda
  • 1 cup semi-sweet chocolate chips
  • non-stick baking spray

Cupcakes

  • 1 (15.25) ounce box, Triple Chocolate cake mix
  • 3 large eggs
  • 1 ¼ cup whole milk
  • ½ cup unsalted butter, room temperature

Chocolate Frosting

  • 1 cup unsalted butter, softened
  • 2 ½ cup confectioners sugar
  • ¾ cup unsweetened cocoa powder
  • 5 Tablespoons heavy whipping cream
  • 1 teaspoon pure vanilla extract
  • 3 cups Valentine Sprinkles and candies

Chocolate Ganache

  • 1 cup semi-sweet chocolate chips
  • ½ cup heavy whipping cream
  • 1 ½ cups mini heart Valentine sprinkles, optional

  • 9x13 inch casserole dish
  • 12-count muffin tin
  • Valentine cupcake liners
  • Valentine Mini Heart Sprinkles
  • Ice Cream Scoop

Instructions

How to make the brownies

  1. Preheat oven to 350°F. Spray a 9"x13" baking pan with baking spray. Set aside.
  2. In a small bowl, melt the butter in either the microwave or in a small saucepan.
  3. Using a large bowl, whisk together the melted butter, canola oil, and sugars
  4. Whisk in the eggs and 2 teaspoons of vanilla extract.
  5. Use another large bowl to whisk the dry ingredients together flour, cocoa, salt, and baking powder.
  6. Gradually whisk the dry ingredients into the wet.
  7. Fold in the chocolate chips.
  8. Pour batter into the prepared baking pan and bake in the preheated oven for 25-30 minutes or until a toothpick comes out clean.
  9. Cool completely before cutting into small bite-size bars. Set aside

How to make the cupcakes

  1. Preheat oven to 350°F. Line a cupcake pan with cupcake liners.
  2. Using a hand mixer with beaters attached, beat the cake mix, eggs, milk, and softened butter until combined and smooth.
  3. Scoop batter into the liners, filling about 3⁄4 way up. Bake in the oven for 21 minutes, cupcakes should be cooked through. Prick the center of the cupcake with a toothpick to ensure cupcakes are finished baking.
  4. Allow cupcakes to cool before removing cakes from the muffin pan.

Chocolate Frosting

  1. Using a standing mixer with the paddle attachment, beat the butter, confectioners sugar, cocoa powder, heavy whipping cream, and vanilla extract until combined, smooth and stiff.
  2. Scoop the frosting into the piping bag and set aside.

Chocolate Ganache

  1. Using a small saucepan, bring the heavy cream to a boil.
  2. Pour over the chocolate chips in a medium bowl and let sit for 1 minute. Whisk until smooth.
  3. Scoop the ganache into the piping bag and cut off the tip. Drizzle the ganache over the brownies and sprinkle the confetti sprinkles on top. Allow the ganache to harden for 30 minutes.

Build the cupcake

  1. Using the chocolate frosting, frost a ring of frosting around the top of the cupcakes
  2. Sprinkle Valentine's Day sprinkles on the frosting.
  3. Carefully place the brownie bite in the center of the frosting. Pipe a dollop of frosting in the center and sprinkle some more confetti heart sprinkles on top
  4. Grab a large glass of milk before enjoying these cupcakes!

Storage

These cupcakes should be kept in an airtight covered container at room temperature or in the refrigerator. They store well for up to 3-4 days.
