How to make the brownies
- Preheat oven to 350°F. Spray a 9"x 13" baking pan with baking spray. Set aside.
- In a small mixing bowl, melt the butter in either the microwave or use a small saucepan over low heat to melt the butter.
- In a large mixing bowl, begin to mix the wet add the melted butter, canola oil, and sugars, and whisk to blend all ingredients.
- To the bowl, add the eggs and 2 teaspoons of vanilla extract, and whisk to combine.
- In a seperate medium-sized mixing bowl, whisk the dry ingredients together flour, cocoa, salt, and baking powder.
- Gradually whisk the dry ingredients into the wet ingredients
- Fold in the chocolate chips.
- Pour batter into the prepared baking pan and bake in the preheated oven for 25-30 minutes or until a toothpick comes out clean.
- Cool completely before cutting into small bite-size bars. Set aside
How to make the cupcakes
- Preheat oven to 350°F. Line a cupcake pan with cupcake liners.
- Using a hand mixer with beaters attached, beat the cake mix, eggs, milk, and softened butter until combined and smooth.
- Scoop batter into the liners, filling about 3⁄4 way up. Bake in the oven for 21 minutes, cupcakes should be cooked through. Prick the center of the cupcake with a toothpick to ensure cupcakes are finished baking.
- Allow cupcakes to cool before removing cakes from the muffin pan.
Chocolate Frosting
- Using a standing mixer with the paddle attachment, beat the butter, confectioners sugar, cocoa powder, heavy whipping cream, and vanilla extract until combined, smooth and stiff.
- Scoop the frosting into the piping bag and set aside.
Chocolate Ganache
- Using a small saucepan, bring the heavy cream to a boil.
- Pour over the chocolate chips in a medium bowl and let sit for 1 minute. Whisk until smooth.
- Scoop the ganache into the piping bag and cut off the tip. Drizzle the ganache over the brownies and sprinkle the confetti sprinkles on top. Allow the ganache to harden for 30 minutes.
Build the cupcake
- Using the chocolate frosting, frost a ring of frosting around the top of the cupcakes
- Sprinkle Valentine's Day sprinkles on the frosting.
- Carefully place the brownie bite in the center of the frosting. Pipe a dollop of frosting in the center and sprinkle some more confetti heart sprinkles on top
- Grab a large glass of milk before enjoying these cupcakes!
