    Apple Pie Filling

    • ground cinnamon
    • ground allspice
    • corn starch
    • large apples, peeled & cored, diced
    • white granulated sugar
    • fresh lemon juice

    Biscuit Topping

    • jumbo refrigerated biscuits
    • unsalted butter
    • light brown sugar
    • ground cinnamon

    Icing

    • confectioners sugar
    • unsalted butter
    • vanilla extract
    • heavy whipping cream

    Equipment

    • 7" small saucepan

    Instructions

    Apple Pie Filling

    1. In a small bowl whisk together the cinnamon, allspice, and corn starch to combine the ingredients and absorb the corn starch into the liquid. Set aside.
    2. In a medium-size saucepan over medium heat, add the diced apples, lemon juice, and sugar. Stir to mix ingredients together.
    3. Add the cornstarch mixture to the apple mixture and toss to combine. Simmer and stir often for 15-20 minutes until the apples are soft.
    4. Remove from the heat and set to the side.

    Assemble biscuits and casserole

    1. Preheat the oven to 375°F/190°C. Spray cast iron pan with non-stick baking spray. Set aside.
    2. In a small bowl add butter, brown sugar, and cinnamon. Place in a microwave for 30 seconds. Mix to combine.
    3. Place the biscuits in the prepared cast iron and pour the butter mixture over the biscuits.
    4. Evenly spread the diced apples all over the biscuits.
    5. Bake for 30 minutes, the mixture will be bubbly and the biscuits cooked through.
    6. Remove from the oven and set to the side to cool slightly before adding the icing. (Make the icing while the recipe bakes)

    How to make the Icing

    1. In a medium-sized mixing bowl, use a hand mixer with beaters attached and add confectioners sugar, butter, vanilla, and heavy cream until well combined, about 5-7 minutes.
    2. Pour the icing over the biscuits
    3. Slice and serve. Optional topping: vanilla ice cream and whipped topping.

    Storage

    Leftover apple pie casserole can be stored in a covered airtight container in the fridge for up to three days.

    This crustless apple pie can also be frozen for up to three months. Just make sure to store it in a freezer-safe container.

    Reheat in the oven at 350°F/177°C for 12 to 15 minutes or single servings in the microwave for 30 seconds to 1 minute.
