    Step 1: Drain the liquid from the kidney bean cans and rinse them in a strainer. Dice the celery, onion, and eggs.

    How to store, reheat, and freeze

    • Leftover bean salad should be stored in an airtight covered container for up to 5 days.
    • This also means it is a great make-ahead salad as it keeps well for parties, weeknight side dishes, or potluck.
    • Due to the dairy in the salad, we do not recommend freezing.

    Do the beans have to be rinsed for this salad?

    For this old fashioned kidney bean salad, we recommend rinsing the beans. The additional liquid in the can will not enhance the salad.

    Do you want to change up this recipe? Here are some ways that you increase the flavor of this dish.

    •  You can use real mayonnaise or miracle whip, whichever you prefer. Miracle Whip will add a bit of sweetness.
    • If you do not prefer sweetness in salads, swap out the sweet relish for dill relish.
    • Be sure to rinse your kidney beans well and also drain the excess water.
    • For variety, use light red kidney beans.
    • Add a teaspoon of red wine vinegar or apple cider vinegar for an extra level of flavor.

    Ingredients

    • 30 ounce can, dark red kidney beans rinsed and drained
    • 4 hard boiled eggs peeled and chopped
    • ½ cup red onion peeled and diced
    • ½ cup celery diced
    • ½ cup mayonnaise
    • ⅓ cup sweet pickle relish
    • salt and pepper, to taste

    Instructions

    • In a large mixing bowl, combine all the ingredients, red kidney beans, chopped hard boiled eggs, diced red onion, diced celery, mayonnaise, sweet pickle relish, and season with salt and pepper.
    • Cover the bowl with plastic wrap and store in the refrigerator for at least an hour up to 12 hours
    • Taste the salad, if needed adjust seasonings. Optional garnish, serve with chopped fresh parsley.
