Crockpot Buffalo Chicken Sandwiches

Crockpot Buffalo Chicken Sandwiches are a delicious and easy way to get your buffalo chicken fix! These sandwiches are made with shredded buffalo chicken, blue cheese crumbles, and provolone cheese, all on a soft hoagie roll, and make for the perfect weeknight dinner.

• boneless, skinless chicken breast

Instructions

1. Place the chicken breasts in the slow cooker.
2. Cover the chicken with the ranch seasoning, and add all the buffalo wing sauce to the slow cooker.
3. Place the butter on top of the ingredients and secure the lid.
4. Cook on low for 5 hours.
5. After 5 hours, use forks or meat claws to shred the chicken and mix well.
6. Switch the slow cooker to the warm setting and let it rest for 30 minutes.
7. Load up the bottom portion of the hoagie with provolone cheese and buffalo chicken. Top with blue cheese. Enjoy!

Storage

This recipe will last in the refrigerator in an airtight container for 3 to 4 days.

You can also freeze the shredded chicken for up to three months.

Reheat chicken on the stove over low heat until it's warmed through. Or, reheat in the microwave for one to two minutes at 50% power or until warm.

Variations

• For a little bit of spice, add a few dashes of hot sauce to the slow cooker before cooking. Or you can add some cayenne pepper to the sauce for an extra spicy kick.
• If you are low carb, instead of making this dish into a sandwich you serve it over a bed of lettuce or with your favorite sandwich toppings in a bowl.
• Brush some melted butter on top of your buns and toast them in the oven if you like a little crunch to your buns.
• Instead of using chicken breasts, you could use boneless skinless chicken thighs or even a pork roast for this dish.
• For extra creaminess, add an 8-ounce block of cream cheese to the slow cooker.
• Use Hawaiian Rolls and turn these into sliders.
• If you don't have ranch seasoning available, use ½ teaspoon each of garlic powder, onion powder, salt, black pepper, and dried thyme. It is not exactly the same, but delicious.
• If you are a big cheese fan, add some shredded cheddar cheese to the chicken at the end of the cooking time.

Serving Suggestions

Cut up some carrots and celery sticks and serve with Blue Cheese Dressing for a quick side dish.

This can be served as a dip along with tortilla chips.

You can also make these into Buffalo Chicken Wraps and use flour tortillas. We make a taco bar and use this recipe as one of the proteins.
