    You're in for a treat with this tasty easy oven Roasted Zucchini slices. The courgettes are crispy chips topped with Ranch seasoning, diced bacon, and cheese.

    Looking to snack on a great food that isn't going to cause the scale to go crazy, this zucchini recipe is for you.

    They're keto friendly and a perfect side or snack that will be loved by all.

    Ingredients

    • Zucchini - Either green or yellow zucchini can be used for this recipe. Leave the skin on the veggies to keep them sturdy and additional nutrition.
    • Olive oil - Brush Olive Oil on the slices to ensure the additional ingredients adhere to the zucchini. You can use any of your favorite oils such as coconut or avocado oil.
    • Bacon - Center-cut bacon is lean and I prefer it for this easy snack. You can also use turkey bacon.

    Step by Step Instructions

    Spray non-stick spray on a baking sheet. Set aside.

    1. Place sliced zucchini on the prepared baking sheet, bake for 5 minutes.
    2. Remove the baking sheet from the oven, brush the zucchini rounds with olive oil.
    3. Sprinkle the zucchini with ranch seasoning, bacon, and cheese.
    4. Bake an additional 8 to 10 minutes. Cheese will be melted. You are ready to enjoy!

    Storage

    Once the roasted zucchini is baked, leftovers can be stored in the fridge for up to 2 days in an airtight covered container. Reheat in the oven at 350°F until warmed through, about 5 minutes.

    To reheat in the microwave, follow the manufacturer's instructions for your microwave for reheating instructions.

    Expert Tips

    • Be sure to wash and dry the veggies before slicing.
    • Use a mandolin for uniform slices. A good sharp knife works well.
    • This recipe is easy with just a few ingredients, I recommend a good quality Parmesan cheese.
    • Thin sliced zucchini will produce crispier results almost like a potato chip. Thicker cuts will be softer and tender.

    What should you look for in a good zucchini?

    Bigger is not always the best.
    A smaller to medium size zucchini will give great flavor, about 6 - 8 inches in length. The skin should be firm and no cuts on it.
    Very fresh zucchini will have tiny bristles still on them.

    Should the skin of the courgettes be peeled before cooking?

    No need to peel the skin. The skin is edible and especially for zucchini rounds, sticks, spears, or chips, the skin helps keep the shape.

    Can I keep the courgettes on the kitchen counter?

    Zucchini will keep on the counter for up to 3 days. Keep away from other vegetables and fruit for best results.
    They can also be kept in the refrigerator for up to 1 week.

    Variations

    • Any of your favorite spice blends can be used for these zucchini chips.
    • A simple seasoning of onion and garlic powder is always delish!
    • Homemade Seasoning Salt is a great choice and we use this seasoning for many recipes.
    • Cajun Seasoning is another favorite with a nice spice to it.
    • Kale Pesto or Nut-Free Basil Pesto would both be yummy on the rounds.
    • Italian Seasoning is another good option for flavor.
    • Turkey Bacon or diced Prosciutto are wonderful options.
    • The thickness of the zucchini slices can be adjusted to your preference. Thin slices will be more crispy and thicker slices will be more tender.
    • Zucchini spears are another way to slice the courgettes.
    • If you are not following a low-carb diet, a sprinkling of regular bread crumbs or Panko crumbs adds a nice crunch.
    • Feta, Gouda, or goat cheese are all great choices.

    Serving Suggestions

    Pair the zucchini chips with any of your favorite dips. Everything But the Bagel Dip is a favorite. Jalapeno Popper Dip is another delicious favorite.     Ingredients

    • 3 medium zucchinis Note 1
    • 3 Tablespoons olive oil
    • ½ Tablespoon ranch seasoning homemade or store bought
    • ⅓ cup Parmesan cheese or cheddar cheese, shredded
    • 3 strips bacon, cooked and crumbled
    • nonstick cooking spray

    Instructions

    • Preheat oven to 350°F. Spray nonstick cooking spray on baking sheet, set aside. Note 1.
    • Slice 3 medium zucchinis into ½ inch rounds. (Thicker slices will result in more tender zucchini, while thinner slices will be crispier) See Note 2.
    • Place the zucchini in a single layer on the prepared sheet pan. Bake for 5 minutes. The zucchini will appear somewhat dry.
    • Brush 3 Tablespoons olive oil on the zucchini rounds.
    • Sprinkle zucchini with ½ Tablespoon ranch seasoning, ⅓ cup Parmesan cheese or cheddar cheese, shredded and 3 strips bacon, cooked and crumbled.
    • Bake for 8-10 minutes, or until they are golden brown and the cheese is melted.
    • Ready to serve.

    NOTES

    Note 1: For a quicker cleanup, feel free to use either parchment paper or aluminum foil on the baking sheet. Spray the paper or foil with non-stick spray before adding the veggies. 
    Note 2: Use a mandolin for even slicing. A good sharp knife works well.
