Looking to snack on a great food that isn’t going to cause the scale to go crazy, this zucchini recipe is for you. The chips or slices can be super thin for extra crispy or slightly thicker for a tender chip. Make our Instant Pot Hummus to dip the chips for a fabulous snack. Having a party, these are a great addition for those looking for a better for you choice of snack.
Ingredients
Either green or yellow zucchini can be used for this recipe. I also suggest leaving the skin on the veggie to keep them sturdy.
We love olive oil for the slices but any favorite oil can be used.
Center cut bacon is lean and I prefer it for this easy snack. You can also use turkey bacon.
Expert Tips
- Be sure to wash your veggies well before slicing.
- Dry the veggies before slicing.
- I use a mandolin for even slicing. A good sharp knife works well.
- This recipe is easy with just a few ingredients, I recommend a good quality Parmesan cheese.

Step by Step Instructions
- Place sliced zucchini on a baking sheet and bake about 5 minutes.
- Remove the zucchini from the oven, brush with olive oil.
- Sprinkle the ranch seasoning, bacon, and Parmesan cheese on each slice.
- Bake an addition 8 to 10 minutes. Cheese will be melted and enjoy.
Variations
- Any of your favorite spice blends can be used for these zucchini chips. Homemade Seasoning Salt is a great choice and we use this seasoning for many recipes. Cajun Seasoning is another favorite with a nice spice to it. Italian Seasoning is another good option for flavor.
- The thickness of the zucchini slices can be adjusted to your preference. Thin slices will be more crispy and thicker slices are more tender.
- Feta, Gouda, or goat cheese are all great choices.
Storage Tips
Once the zucchini slices are baked, leftovers can be stored in the fridge for up to 2 days in a covered container. Reheat in the over at 350°F until warm. about 5 minutes. Use your microwave directions to reheat in the microwave.

Loaded Baked Parmesan Zucchini Slices Recipe
Equipment Needed:

Ingredients
- 3 medium zucchinis Note 1
- 3 Tablespoons olive oil
- ½ Tablespoon ranch seasoning homemade or store bought
- ⅓ cup Parmesan cheese, shredded
- 3 strips bacon, cooked and crumbled
Instructions
- Preheat oven to 350°F.
- Slice the zucchini into rounds. Thicker slices will result in more tender zucchini, while thinner will be more crispy. Note 1
- Place the zucchini on two greased cookie sheets and bake for 5 minutes, until zucchini appears somewhat dried.
