Instructions
- Preheat the oven to 400°F/. Prepare a large rimmed baking sheet with parchment paper. Set aside.
- In a large mixing bowl, use a whisk to beat together the eggs with the milk, salt, and black pepper. Set aside
- In a large skillet over medium-high heat, melt the butter.
- To the skillet add the eggs, and cook, stirring often, until the eggs are almost completely cooked through. Keeping the eggs slightly soft makes it easier to spread on the bagels.
