- 5 mini bagels (halved)
- 5 large eggs
- 1 Tablespoon whole milk
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
- 1 Tablespoon unsalted butter
- 1 cup cooked ham (diced)
- 1 cup Colby Jack cheese (shredded)
Instructions
- Preheat the oven to 400°F/205°C. Prepare a large rimmed baking sheet with parchment paper. Place the 5 mini bagels (halved) on the prepared baking sheet. (10 halves) Set aside.
- In a large mixing bowl, use a whisk to beat 5 large eggs, 1 Tablespoon whole milk , ½ teaspoon kosher saltand ½ teaspoon black pepper. Set aside
- In a large skillet over medium-high heat, melt 1 Tablespoon unsalted butter
- To the skillet, add the whisked eggs, and cook, stirring often, until the eggs are cooked through.
- Top the bagel slices with cooked scrambled eggs, gently push them into the bagel so they stick to the bagel.
- Evenly sprinkle the eggs with 1 cup cooked ham (diced) and 1 cup Colby Jack cheese (shredded).
- Bake in the preheated oven for 5 to 8 minutes, until the ingredients are warmed and the cheese is melted.
- Ready to serve. Optional Garnish with hot sauce, ketchup, or chopped chives.
