    My weakness is chips and dips! I just love them! A few years ago, after having my strokes, seemed that the chips and dip love needed to be revamped into healthier options! While recuperating, I spent a weekend in upstate New York with the hubs. When we were traveling home we stopped at a farm stand with a variety of dehydrated veggies, and they were delicious!     Whole roasted Cajun cauliflower is a super easy and tasty vegetarian recipe! I use fat-free plain yogurt and my Homemade Cajun Seasoning Blend to create a delicious crispy coating for the cauliflower! Served on its own with a salad or as a side dish! Total YUM!

     

    I have had a majorly busy August, and I barely had time for myself and sadly cooking!  I had to focus on quick meals because there was literally just no time. We needed quick, easy, healthy meals! Thus, we have this wonderful dish, Whole Roasted Cajun Cauliflower! I can prep this and throw it in the oven and its a no-fuss side dish!  I made a batch of my homemade Cajun seasoning blend and I use that to prepare a few meals like this one and my Cajun Chicken and Pasta!  I will also be sharing that recipe with you soon!

    What I love about this cauliflower dish is how versatile it! The Cajun spice blend has just the perfect amount of heat and adds a great flavor to the roasted cauliflower.  I love this with a side salad dressed with Avocado Buttermilk Green Goddess Dressing!

    This low-fat, low-carb dish comes together by using fat-free plain yogurt, you can use Greek fat-free yogurt as a substitute.  I combine the yogurt with the Homemade Cajun Seasoning Blend , lime juice, and there is nothing wrong with adding a little extra garlic flavor with some minced garlic.  I spread the mixture over the entire cauliflower head,roast at 425 degrees, and patiently wait for it to  be eaten! I love to top it with chopped parsley!

    Ingredients

    • 1 large head cauliflower
    • 1 cup fat-free plain yogurt
    • 1 clove garlic minced
    • 2 teaspoons Homemade Cajun Seasoning Blend or Cajun seasonings
    • 1 lime, juiced
    • chopped cilantro or parsley optional garnish

    Instructions

    • Preheat oven to 425 degrees.
    • Spray a baking sheet with non-stick olive oil spray.
    • Trim the green leaves from the cauliflower. Trim stem.
    • In a bowl, combine fat-free plain yogurt, minced garlic, Homemade Cajun Seasoning Blend or Cajun Seasonings, and lime juice.
    • Spread the yogurt mixture over entire cauliflower head.
    • Place cauliflower on prepared baking sheet.
    • Roast for about 40 minutes. Begin checking the cauliflower for tenderness. The outside with have a crispy coating. Insert a wooden skewer into center and it should easily go into cauliflower when done. Depending on size of cauliflower, it can take up to 50 minutes to roast.

    Italian Meatballs and Spaghetti

    A delicious homemade recipe for Italian meatballs and spaghetti in a marinara sauce recipe! A family favorite that is easy to prepare and I always make extra to freeze meatballs for another meal!  Authentic Italian meatball and spaghetti dinner, you won't be disappointed, these are delicious!

    Italian meatballs always remind me of my Mom!  Why would Italian meatballs remind me of an Irish-American Mother, because my Mom taught me how to make these when I was a little girl. My Mom is a self-taught cook who has always made great food but her Mama Murphy meatballs are always amazing. Mom got her original recipe idea from a neighbor on our block who was a great Italian cook. No measuring was really every done but they were always incredibly tasty and a family favorite!  I have changed my recipe slightly over the years and I have different versions of my Italian meatballs.  I go back and forth with the ingredients because I am extremely conscientious of my family's cholesterol intake so I am always changing the egg combination and type of breadcrumb that I use to make these.  This particular recipe is using 90% lean ground meat!  I use an eggs,  low-fat milk, and seasoned Italian breadcrumbs.

    Everyday tip -  I always make extra meatballs to freeze a batch for another meal! These are perfect in the slow-cooker!  When I am making extra meatballs to be frozen, I spray a cookie sheet with non-stick spray,  I  place the extra meatball on the cookie sheet,  and bake at 350 for about a half hour and let them cool and place into freezer bags for future meals!!

    I know many who like to fry their meatballs.  I confess, I do not like my meatballs fried.  I like to make a marinara sauce and add in my meatballs and let them simmer over low heat for about 15 minutes.  Then I gently stir occasionally until the meatballs are cooked, 45-60 minutes, major deliciousness!!   The key to a tender meatball is to not overwork the meat mixture as you form the meatballs!!

    These can be made the night before you would like to serve them.  I personally feel they taste even better the second day.  Serve these Italian meatballs with a pound of whole wheat or fiber-enriched spaghetti and a side salad like Weight Watchers Caesar Salad with Poblano Dressing!!  I made these at the end of last week and I think I am going to take a few frozen meatballs out of the freezer for dinner tomorrow!  These pictures are making me hungry!

    Ingredients

    • ¼ cup dry red wine
    • 2 28 ounce cans crushed tomatoes
    • 1 1 ounce can diced tomatoes liquid drained
    • 1 6 ounce can tomato paste
    • 1 6 ounce can water use the tomato paste can
    • 1 bay leaf
    • ½ teaspoon ground fennel seeds
    • 1 teaspoon fresh basil
    • 1 teaspoon fresh oregano
    • 1 teaspoon parsley
    • salt and pepper to taste
    • Italian Meatballs:
    • 2 ½ pounds ground beef
    • 1 pound ground pork
    • 280 grams Italian bread about ½ loaf
    • 8 - 10 ounces milk
    • 1 cup Parmesan cheese
    • 1 teaspoon fresh parsley finely chopped
    • 2 eggs lightly beaten
    • 2 cloves garlic finely minced
    • 1 small onion grated
    • 1 teaspoon salt
    • 1 tespoon black pepper

    Instructions

    • Marinara Sauce
    • In a large pan, over medium heat, add olive oil. Add the onions until translucent, about 5 minutes. Add the minced garlic and stir about another minute.
    • Add the red wine and stir for 1-2 minutes.
    • Add in the crushed tomatoes, diced tomatoes, tomato paste, water, bay leaf, ground fennel seeds, basil, oregano, parsley, salt, and pepper.
    • Let simmer over low heat while preparing the Italian meatballs.
    • Italian Meatballs
    • In a large bowl, combine the ground beef, Italian seasoned breadcrumbs, milk, Parmesan cheese, beaten eggs, finely minced garlic, finely minced onion, salt, and pepper.
    • Use your hands to form meatballs, around 2 inches each.
    • Add the formed meatball to the Marinara Sauce, cover pot and allow to simmer around 15 minutes.
    • Gently stir the meatballs, being careful not to break any of the meatballs.Continue to simmer, stirring occasionally for another 44-60 minutes, until meatballs are cooked through.
    • Remove bay leaf. Check seasoning.
    • Serve over spaghetti.

    Notes

    I prefer to use my mini food processor to finely chop the garlic and onion for the meatballs

    That's right, Quick Papaya Coconut No Churn Ice Cream. This ice cream has no cream or eggs and you don't need an ice cream maker! This is a quick and easy recipe that happens to be vegan!

    It has been the hottest and most humid week here in New York.  I had a papaya in the fridge that needed to be used and an abundance of coconut milk so I said why not make ice cream! I love ice cream, seriously love it but if I ate it every day, my waist would hate me and I'm trying to stay out of my fat pants!  I also had a fantastic time eating some amazing BBQ last week so I wanted a lighter option to my ice cream and  I really don't want to break out those fat pants!

    Oh my, this was a great choice for me! My family and I loved the flavor of the ice cream.  So super easy and you don't need an ice cream maker!  I simply puree the papaya, combine the puree with light coconut milk, shredded coconut, and agave! Pop it in the freezer for about 2 hours then I blend the ice cream one more time to get out the ice that forms and smooth the ice cream.  I toasted some almonds for a topping! I can only say its Yum!

    Ingredients

    • 4 cups fresh papaya
    • 1 ½ cups coconut milk
    • 1 medium frozen banana
    • ¼ cup shredded coconut
    • 4 Tablespoons agave
    • optional - roasted almonds and mint for garnish
    US Customary - Metric

    Instructions

    • In a blender, add the fresh papaya, banana, coconut milk, and agave. Puree until smooth.
    • Stir into the pureed papaya the shredded coconut.
    • Place in a large freezer safe bowl, cover with either a lid or plastic wrap.
    • Let set in the freezer about 1 ½ hours.
    • Remove from the freezer, blend the ice cream mixture one more time. This removes the ice formations.
    • Place ice cream back into the freezer until set, about 4 hours.
    • Top with roasted almonds and mint leaf, optional

    Grilled Orange Teriyaki Pork Chops

    Grilled Teriyaki Pork Chops are delicious and so flavorful. Pork chops are marinated in fresh orange juice, teriyaki sauce, and honey to caramelize the pork. For a low-carb dinner, pair with corn on the corn or grilled veggie kabobs!

    I use a delicious spice rub from Swine Dining called Wimpy's BBQ Rub to rub on the pork before it is grilled. The spice rub includes Hungarian paprika and brown sugar and it adds a tasty flavor to the pork chops. Save some of the sauce to brush on the pork as it grills to bring the flavors to a wow factor.

    What sides go well with grilled pork chops?

    My suggestions, besides corn:     

              Cheesy Grilled Foil Packet Potatoes and Onions

              Lighter Homemade Macaroni Salad

              Cauliflower Tabbouleh

    Roasted Asparagus with Lemon and Garlic

    How long should you grill pork chops?

    To cook pork chops on a grill, preheat grill to 450 degrees or a grill pan to hot. Depending on the thickness of the pork chops, slightly thicker pork is best to grill, about 4 minutes, turn pork over and grill another 3-4 minutes. Internal temperature should be 145 degrees. Let pork rest about 5 minutes before serving to keep pork juicy.

    How long can you marinate pork chops before grilling?

    Marinate the pork chops in the teriyaki marinade at least 30 minutes up to overnight. You can also place pork in a marinade and place in a freezer bag in the freezer. When ready to cook, defrost in the fridge and the pork will marinate as it defrosts. Discard marinade before cooking or grilling.

    What is the best seasoning for grilling pork?

    For this dish, Wimpy's Spice Rub is used. If unavailable, use a combo of paprika, brown sugar or coconut sugar, black pepper, salt, garlic powder, onion powder ( 1 teaspoon each) and if a bit of spice is your fancy, add ½ teaspoon chili powder. Any extra seasoning can be kept well covered for 3 months.

    What are the best cuts of pork to make grilled teriyaki pork chops to grill for this recipe?

    Absolutely. I use either bone-in or boneless pork chops for grilling. I prefer the pork chops be about thickness about 1 ½ inch so they do not dry out during the grilling process.

    How to make Grilled Orange Teriyaki Pork Chops:

    1. In a small saucepan, over medium heat add olive oil and add garlic, onion, and ginger.
    Preparing a teriyaki marinade in a silver saucepan beginning with sauteing onions and garlic in a little olive oil

         2. Saute garlic, ginger, and onion for about 2 minutes to sweat the onions.

    Onions and garlic have been sauteed for about 2 minutes to become translucent to make teriyaki marinade for pork chops

    3. Add into the saucepan the orange juice, teriyaki sauce, honey, and pepper. Bring to a boil and reduce heat and simmer              for about 5-7 minutes.  Blend the marinade with an emulsion blender or standing blender.

    4. Once cooled, take half the marinade and place in a large storage bag with the pork chops. Let marinate at least 30 minutes up to overnight.

    5. Over medium/hot heat on a grill around 425 degrees. Grill pork chops about 4 minutes per side. Use the second half of marinade to brush some on the pork as they grill.

    6. Once pork is complete, let the chops rest for about 5 minutes. Serve with extra marinade as a dipping sauce.

    • Let cool slightly, add the orange teriyaki mixture, or use an emulsion blender. Blend ingredients until smooth. (See note 2)
    • Divide sauce in half. Place first half of sauce in plastic storage bag with pork chops to marinate, at least 30 minutes to overnight. 
    • The second half of teriyaki sauce can be divided and half used to brush on pork while it is grilled. Serve remaining sauce with pork at the meal as a side sauce.
    • Preheat grill. Remove pork from marinade. Discard marinade. Sprinkle pork chops with Wimpy's spice rub.
    • Place the spice-rubbed pork chops on heated grill for about 4 minutes and turn pork chops. Grill temperature should be 400 degrees. 
    • Mop ½ reserved orange teriyaki sauce on the pork chops and grill until cooked through.
    • Grill about 4 minutes total, flip pork chops grill another 4 minutes. The internal temperature of pork should be 145 degrees. Let pork rest about 5 minutes before serving.
    • Serve with remaining orange teriyaki sauce.

    Notes

    Note 1: Pork Chops can be bone-in or boneless, to ensure pork does not dry out, use cutlets about 1 ½ inches thick.
    Note 2: I blend my marinade because I use it as a sauce while grilling and a dipping sauce. If in a rush, I have skipped the blending step.  Also, if using a blender to combine ingredients, be sure to use a cloth to hold down the blender top. Hot liquids need caution when blending. 
    Note 3: The teriyaki marinade and fresh pork chops can be frozen in freezer bags prior to grilling. As the pork defrosts, they marinate in the orange teriyaki sauce.  The pork/marinade can be frozen up to 3 months. 
    Note 4: If Wimpy Pork Rub is unavailable, feel free to use another favorite or combine: 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon smoked paprika, 1 teaspoon brown sugar, ½ chili powder, ½ teaspoon salt

Thank you to True Made Foods™ for sending me their delicious Original Ketchup which is the base to my slow cooker baked beans!
